You can raid caravans whenever you want, actually, and most of your relationships reset when you become a vassal, so it's free money and xp when you have a decent group going.

Sieging Vincloud Castle was the worst. The siege tower needs to roll into position before it'll deploy. In the meantime, my men keep running towards the moat against my orders and getting slaughtered by enemy archers. I'll sit atop the tower as it slowly, SLOWLY inches forward. The drawbridge falls open, then I get about a dozen arrows sticking out of my face.
Put your shield up when you walk towards all those archers, man. Also, have a larger shield. Since that's a siege with a siege tower, I guarantee you it's a lot easier than when you have to use a siege ladder. Your soldiers won't know how to hop over the wall and you'll be the only one actually inside the castle killing people.
alright what's all this about siege towers? do you need a certain engineering skill to be able to build them?
Each siegeable area has a specific methodology involved. I don't know if it is randomly assigned at the start of the game or static. Some use siege towers and some use ladders. They both have their advantages and disadvantages and neither work particularly well yet.
Siege towers move slowly toward the wall and then the top ramp unfold allowing you to charge (usually to your death) the top of the wall. The siege tower ramp is wide enough that your troops can pathfind across it and make it onto the wall in numbers. But before it deploys, they mostly hang out around the sides getting shot. In tower operations I usually attempt to rush one of the buildings on the walls and wait for a few of my troops to distract some of the archers. Then I wade in and start killing.
The ladders are more like incredibly steep and narrow ramps. The benefit is that you don't have to wait for them to deploy, you just have to hustle up them under fire (bring a shield). The downside is that they are too narrow for your thickheaded troops to understand. The mainly clog it up, preventing you from getting into position. Once you manage to outlast all the troops in front of you, you can start doling out the damage. I use a long axe or hammer to kill the people guarding the top of the ladder and then switch to sword and shield and try to mop up as many of the crossbowmen and archers as I can. But, since none of your troops are likely to actually make it onto the wall, this can be tough.
In the bigger sieges, I am usually satisfied if I can take down 20-30 of their guys before retreating (or getting knocked out). I would say investing in the medical skills, especially the one that turns troop death into troop knockouts is invaluable. Party morale takes a big hit during the long sieges, because every time you "lose" your morale will drop. You can attempt to offset this by taking out any caravans or other enemy forces that come close enough to strike during the siege and try to find somewhere close to buy or steal food.
I have noticed at a few of the siege sites a trebuchet. I am hoping that will become funtioning at some point (unless it is alread and I am too dense to operate it).
Another thing I wish was possible was to hit the equipment screen as the start of any battle. That way if I am loaded up with ranged instead of melee weapons and an enemy force sallys to break the seige, I could switch back to my lance, sword, etc.

All towns should have quests. Either go to the lords hall and ask him for a job, or wander around the marketplace until you find the guildmaster, then ask him for a job. Also, River Pirates should be easy.

river pirates are ridiculously easy!
I usually start the game by ditching the farmers in my party so I just have mounted units and can move faster
then hunt down river pirates and if/when I lose all my other units I solo river pirates mounted with a polearm
I've soloed parties of over a dozen river pirates this way which is a great way to build up some initial cash (don't have to pay anyone and can move faster/pirates don't run from you) as well as experience
the only thing this game needs to make it better is some wicked dismemberment/pain skins/gore/blood/ something. It's pretty visceral as it is right now (I LOVE the way they animated/ragdoll'd the way people get knocked off horses - so satisfying), but when a 2 foot axe blade attached to a 6 foot staff going top speed on horseback hits a dude going the opposite direction at top speed on horseback in the neck, I want to see that head go flyin'. I also think it would be an awesome gameplay thing - like, I hate how sometimes a shirtless river pirate can hold up his dry tinder and block my galloping double axe strike - how cool would it be if he blocked it but at the cost of breaking his arm or cutting his hand off?
Also, what -reputation do you have to be at to invade a castle. I've taken all of orange and purple's castles, I want green and yellow to fall to my banners.

man i started a new game with that bandit king mod last night and holy crap
I try and kill a caravan and suddenly EVERYONE hates me so I can't go into any castles without sneaking in
i try to loot villages to get cash but there's like 40 farmers in every craphole village defending them now, and all I've got is like a sword and a shield and a bow with no arrows
couldn't find any river pirates whatsoever and everyone else killed me constantly and i lost everything

i mean yeah it doesn't NEED it but think how much more epic charging a line of spearmen would be if it looked like oblivion
I'll agree with you on the animations and AI, but I think M&B strikes a good balance between serviceable graphics and performance
let's face it, if this game looked comparable to new commercial games it would probably require a drastic reduction in both the numbers of troops onscreen and the size of the battlefields
the graphics could definitely use some polish, even just better and more varied textures and less sharp edged geometry, but I don't want them to sacrifice the game's scale for it (or reserve the huge battles for computers that don't exist yet)
plus I imagine that stuff requires huge art departments and expensive licensed game engines

that's because WoW's graphics are ass covered in stylized cartoons. Ridiculously low polys with really nice textures and a lot of forethought that goes into them to stylize them and make them incredibly streamlined.
Your lance automatically couches when you go fast enough. No need to use the attack button. Once it's down, just try to make it hit something and relish as it delivers absurd amounts of damage.
