We took the first point, but couldn't get ourselves set up at the final corner to the last point. We were pushed back all the way to the underbridge tunnel entrance for most of the map, pushing heavies and medics while the other team had at least 4 demos and 2 engis.
Our team just kept going at it, getting to that corner once or twice, but always getting uber-pushed back.
Then just something happened. We got up to the corner. I, knowing the medic next to me had an uber (and being thoroughly frustrated at this point) Jumped down into the middle, finding a sentry and all their demos there. Pretty much caught them off-guard, as they started to backpeddle (S key + stickies = pro-demo tactic). The uber wasn't on me yet, but once I got revved up and started firing I hit a crit streak. Knocked out a good number of the demos and the engi at least. Uber activated, popped the sentry, and we sprinted for the last point, and the team followed behind (gasp! a novel idea no?!). Killed a pyro, another demo, a sniper, and that was game.
The other team was dominating us in the usual demobowl fashion, but one good uber push and crit streak broke this. And that situation holds true to a competitive scenario. If I had jumped down into the middle and wiped out the other's team defense because of a 5-20% chance, that wouldn't be right for comp play.
Mix in lower team numbers and I chop half their team off for so many seconds

The other team was dominating us in the usual demobowl fashion, but one good uber push and crit streak broke this. This exemplifies 1) The need for offensive DB teams to have multiple medics to get the uber rolling going 2) The imba of crit streaks, great for the fun/pub games, but if that had happened in a competitive game there would be many unhappy people (as I easily knocked out half their team alone)
As for limiting classes, nah. If they're hitting you with spies or snipers, just switch up your strategy or something. The server shouldn't have to accommodate for you losing

You said imbalance of crit streaks. Another way of saying imbalance is broken. Is there a disconnect between the two definitions I'm missing?
I could remove that line and still make the same point. It's still anecdotal evidence. What's more it's an example from a non competitive environment that you are placing in a competitive one and treating equally. Do I really need to point out why this is wrong?

I'm saying crits are imbalanced for competitive environments. Broken implies it has to be fixed. They don't. They simply don't work in that other environment.
And that situation holds true to a competitive scenario. If I had jumped down into the middle and wiped out the other's team defense because of a 5-20% chance, that wouldn't be right for comp. play

I think that situation is a strawman, but not a deliberate one. Just a limitation on how you are looking at it. If you take crits as absolute, meaning they cannot be changed, you get strategies for dealing with them. In this case, don't all clump up together in a big fucking bunch like morons, or you get wasted.

Our team was literally getting rolled and uber-pushed back to our spawn (when we had the first point capped) and because of an uber + well timed crits we came rolling back

12+ tourney crits on baby. Why does nobody try this. Squad based competitive gameplay. Am I the only person who can see the potential here. It's a competition about how well you can organise 12 men in a team. It's like, the soul of the game, right there.
