Oddly enough, none of those are really based on the movie characters, with the exception of Rogue Squadron. LEGO Star Wars is a decent game to play through, since it follows the movie story.
Well, I really like Star Wars Battlefront. It is kind of cool being able to fight battles from the movie from the perspective of a regular soldier.
The only other Star Wars games I've played (in the last 10 years) were Knights of the Old Republic 1 and 2. Both are set way before the movies take place, so different characters. The first one was really well done and the story line was great and I totally recommend it. The second felt half assed.
If you like strategy games, Empire at War is decent, and Rebellion is underrated though it's also quite dated.
X-Wing Alliance is almost but not quite as good as TIE Fighter.
A lot of this depends on taste though. I know a lot of people hate the Rogue Squadron games because they're too "arcadey" for example. Also, if you haven't played any of the Dark Forces/Jedi Knight games, unless you really want to see how the series has progressed, you might as well jump right into Jedi Academy. It has the best lightsabre combat and the single player campaign lets you start having fun with Force powers and all that from the beginning.
and every star wars fan owes it to themselves to play the lego star wars games. great fun, hilarious, easy-going gaming - good times. especially fun playing co-op

There are so many books, that it's really hard to list out what of them all you should go for or not. Just, if you haven't read any of them yet, read Timothy Zahn's Thrawn Trilogy. It's some of the first expanded universe books written, and was closely collaborated with George Lucas. The three books of the trilogy are Heir to the Empire, Dark Force Rising, and The Last Command.
Most of the EU stuff is considered canon until George Lucas makes a new movie that directly contradicts/negates it.

It's too bad Star Wars Galaxies is awful now, because in its prime it was an amazing Star Wars game. Great atmosphere and you'd have learned everything you ever want to know about the Star Wars universe.
Bookwise, I highly recomend you find the books by Matt Stover. Had Ep III Been half as awesome as his novelization it would have been the greatest movie ever. He also wrote one of the NJO series (Traitor, I think) and a clone wars book (Shatterpoint) featuring ass-kicking, Mace Windu, and Mace Windu kicking ass. Read this book.
Game wise, it's all been pretty much said. TIE Fighter (if you can get it to run) tops the list. But this might be colored by some amount of nostalgia on my part. Also, consider this another vote for Lego Starwars.
The Rogue Leader for the gamecube was pretty damn awesome. Almost all the other good ones have been mentioned so I'm going to say Star Wars: Rebellion ate up days of my life.

Side Note: Empire at War on 52" Sharp LCD TV running at 1920x1080@24Hz..... VERY entertaining to say the least.... Tried FreeSpace 2 Open source this morning, but was starting to get a bit motion sick, and the controls were lagging..... Entertaining though....
I've played and really enjoyed both Jedi Knight games, Republic Commando, both Battlefronts (although 2 is a lot better), Empire at War and KotOR I and II.
There's actually a "Best of Star Wars" boxed set for PC that has all (or at least most) of the really good Star Wars games. I think it has Empire at War, KotOR, Republic Commando and Jedi Academy. Get that.
Jedi Knight II: Jedi Outcast = flipping awesome
Lego Star Wars(the complete saga) = hilariously awesome
Knight of the old republic = a must if you are into RPGs
Dark Forces - so sweet, if you can stomach Stormtrooper sprites
Dark Forces II: Jedi Knight - Oh man, they made a sequel, AND we get a lightsaber this time?!
