I was very sad as I read the thread and noticed it was from 2008.
Then I was sad because someone recommended SR2, M&B, and Dwarf Fortress before me. The OP's recommendation request was pretty interesting compared to most: he wanted a time sink game that would be fulfilling after playing it a very long time and also made him want to stay home and play. That rules out a lot of the good games that were recommended here simply because they have a defined ending or end up being fairly static.
For future reference, I think the Combat Mission series is one that you can really put a lot of time into and feel fulfilled about the results after you get good at it. Kind of like playing chess or learning a sport or something.
