So a co-worker asked if I wanted in on fantasy football league. Problem is, I'm a total noob to it.
Not even sure where to begin or how its played. I know it has something to do with picking players and getting points based on how they play through out the season, but outside of that I'm about clueless.
Also, what are some good sites to keep track of stats for players and to help me pick players?
Anything in general will be helpful I'm sure!

You've got the general idea of fantasy football down already. Are you a fan of the NFL as well? It will be very helpful if you are familiar with the players you'll be picking.
Different stats carry different point system. Here is what our work league does:
Passing Yards (25 yards per point)
Passing Touchdowns (6)
Interceptions (-1)
Rushing Yards (10 yards per point)
Rushing Touchdowns (6)
Reception Yards (10 yards per point)
Reception Touchdowns (6)
Return Touchdowns (6)
2-Point Conversions (2)

Fantasy football is a pretty profitable industry, so a lot of the better resources you have to pay for. http://www.rotoworld.com/content/Home_NFL.aspx is a good site, otherwise you can pick up any draft magazine at Barnes and Noble for $5 - $6 which are great.
Do you know which service your league is using? Stats, scores, etc. are all tracked online and easily accessible.

Also, I think most leagues just rank you based on points, but some leagues have you "play" other teams in the league. If your team gets more fantasy points than your opponent, you win.
