The Guiding Principles and New Rules document is now in effect.
Inspired by the PS3 thread, though I already own/have played. I dont use XBox live, so I mainly play sinle player with the occasional co-op:
The Orange Box
Bioshock
Mass Effect
Halo 3
Oblivion (love wandering around picking flowers... dislike...almost everything else.)
GTAIV
Eternal Sonata
Fallout 3, Fable 2 and Alan Wake (when it ever comes out!!!) are earmarked for purchase at some point in the future also.
... is there anything else at all thats really worth it? Or is that pretty much it, not to say that most of these games weren't awesome (Oblivion and Eternal Sonata being quasi exceptions. I like ES but having not played RPGs in a bit, grinding to level up all my characters is becoming a pain... or should I just pick 3 I like and stick to them?)
I think you already have the best of the best, but I'd also recommend Gears of War. It's completely mindless, but in a guilty pleasure, big Hollywood action flick kinda way. And don't worry about being able to enjoy it without LIVE, I too choose not to pay just for online multiplayer and got some nice mileage out of GoW.
Heh... interesting that Condemned has appeared on this list a couple of times but Condemned 2 has not... I take it it is not so great. Lost Odyssey I looked forward too but it got some fairly crap reviews in terms of story/charater empathy (which is a driving force behind that sort of game for me)
Might look into Viva Pinata... I almost got it with the 2 games with x box on release, but got Lost Planet instead... which... sucked just a little bit. Or I sucked at it (also likely... I got stuck in some cave thing on like the second or third level), one or the other. It was a little bit too arcadey for my tastes.
If you like fighting games at all I would definitely give Virtua Fighter 5 a try, barring that I'll second GoW, especially if you have a buddy to play splitscreen co-op with.
I must admit, the gameplay of GOW looked fun enough... but it was all offset by the muscular manli-man-men-so macho we could be in 300! Style dudes... (did I mention ugh teh macho?) and their dialogue.

Rock Band costs about 3 times as much as a normal game, but if you're into rhythm games I can guarantee that you'll dump far more than 3 times the normal amount of time into it.

Get Condemned 2 if you liked the first. It seemed less popular with some people, I personally loved it to bits.

All true, valid complaints, but the gameplay, graphics, and pacing are all outstanding. At least there's some elitist satisfaction in turning up your nose at the characters and dialogue while you're playing the game..."Somewhere out there, someone thinks that's clever and awesome. And I'm not that someone, which is nice."
Crackdown: It's really short, but it's also gotten pretty cheap over time and for as short as it is, it is seriously, destructive fun.
Dead Rising: It's cheap now, offers good replay value, and is probably one of the best single player games on the 360. Also, mass zombie killings.
Also, recent games have been pretty good, but you might not like the genres, I don't know. Or could have played them on the PS3. These include Civilization: Revolution and Soul Calibur IV. There's a lot of hype around the upcoming Banjo-Kazooie: Nuts and Bolts (only $40 at launch), and if you pre-order it you get a free download of the original Banjo-Kazooie two weeks before it releases on the Marketplace. Just thought that was worth mentioning.

The Darkness will get overlooked because it's a licensed property. This is good and bad...
Good: because no one bought it, it's cheaper than most games now, even new.
Bad: because no one bought it, there's less of a chance this awesome studio will do more work.
This is the same crew that came out with Escape From Butcher Bay, a game that rocked the very foundations of Gamers Sense by essentially being a movie tie-in game that refused to suck.
The Darkness sets itself apart with excellent graphics, top-notch voice work and the best presentation of a narrative I've ever seen in a FPS (never played Bioshock, so it stands imo). From what I hear it has crappy online, but I wouldn't know - never felt compelled to try it. You can probably find it for less than $20.00.

Yes I know, everyone's crazy for Soul Calibur lately. But IMO VF5 is to SC what the Marinara trench is to the ocean. The ocean is very big and very popular, and the trench is the deepest thing on earth, home to shit you've never imagined.
I'm not sayin' Soul Calibur's a bad game - far from it - but the best fighting game on current gen systems is Virtua Fighter 5, and it's a helluva lot cheaper. Also, the 360 version has online play.

I was really surprised by the quality and polish and powerful story in this one. I've only just made it past the orphanage - if you've played it, you know what I'm talking about - and it's probably one of the only video game stories that has affected me this much.
Mercenaries 2 is also fantastic. If you can look past a lack of polish, there's a lot of fun in there.
Call of Duty 4's single-player campaign is amazing, and definitely justifies a purchase even if you never take it on Live. I played through it three times and would play it again if I didn't have a huge backlog.
As others have said, The Darkness is an overlooked gem.
Dark Sector should be pretty cheap now, so it is definitely worth picking up. Great action game that channels Gears of War and Resident Evil 4.
You have an offline co-op partner? Then buy Earth Defense Force: 2017 immediately.

Seriously though it's dashed good fun if you have an offline co-op partner and still pretty cool if you don't, plus it should be pretty cheap by now, right?
And in an effort to redeem myself then I shall also add another voice to the recomendations of The Darkness and Earth Defence Force, both are genius games in very different ways.
Assassin's Creed should have been mentioned by now.
Well, I think most people are thinking that have = owns. AC is more like a must rent game.
I vote own, and I will fight you all.
Most of the good stuff has already been mentioned, but reiterating what you don't already own
Assassin's Creed
Condemned (Bloodshot is good too, just not quite as good as the first game)
Gears of War
Devil May Cry 4/Ninja Gaiden II (if you're into that sort of thing)
Call Of Duty 4 (haven't gotten around to it, but it supposedly blows minds)
A Guitar Hero/Rock Band of your choice
Originals:
Psychonauts
Ninja Gaiden: Black
XBLA:
Bionic Commando: Rearmed
Braid
Ikaruga
Rez HD
Puzzle Quest
Pac Man: CE
At least one of the Geometry Wars
Not necessarily must own, but good games:
PAA: On the Rain-Slick Precipice of Darkness
Tomb Raider Legend/Anniversary
Dark Sector wasn't half bad if you want more Gears
Too Human is more decent than reviews would have you believe
Carcassonne is more interesting than it has a right to be

The story was like..."whaaaaaat?!" but the game is fucking amazing. If you played condemned 1 Condemned 2 was WAY better IMO.
Also, For Eternal Sonata, the game is quite easy really. Grinding isnt too necessary as I found out when I wasted hours away grinding for nothing. And you CAN stick to a certain ground but there ARE times when you get split up so I dont recommend that. But the game is quite easy. In fact, on my second playthrough, the way it works is, its harder than the first playthrough, enemies do 1.5x dmg, 2x health, 2x defense. I didnt train on THAT file, and I was perfectly fine through the game. I only trained on my first, which was SO not needed.
And hey, Lost Odyssey was fuckin awesome, seriously. I loved the story, the graphics are sweet, and its just...awesome. Easily over 100 hours for me. You people and your "I dont buy games if they dont get perfect 10s" jeez >.> I tend not to listen to reviews and find a good amount of fun in many games. I guess it depends, I really did like the story, myself.
Blue Dragon is also a great game, RPG, like Sonata but way different battle system, also very very easy in terms of needing to level up to kill shit.
Im an RPG whore so yeah...Id also say Tales of Vesperia but theres 3 rpgs above...no need for a 4th...or is there?!
Theres a wealth of good games on the 360 really, I just named some RPGs and Condemned, and cmon, you dont like Oblivion? Thats rough.

Tales of Vesperia is apparently Eternal Sonata but better so I'd highly recommend that. If you're interested in Lost Odyssey, I'd also give it a try; LV-ing up isn't hard since low level characters gain XP faster than high level characters and although the main story is merely decent, the back story (told through a series of short stories) is fantastic.
Geometry Wars 2 & Castle Crashers are two of the best games of the year so far despite being merely downloadable games so I highly recommend picking up both of those.
The Darkness, the Club, Stranglehold, Earth Defense Force 2017, Dead Rising, Crackdown, and Tomb Raider: Legend are all fun action games that can be picked up for under $20 used at your local GameStop.
Civilization Revolution is easily the best turn based strategy game on a console ever so if that interests you, I highly recommend it. I like Civilization IV on the PC better since it's more complex & complicated, but even I think Civ Rev is a fun change of pace from time to time.
