how do bars keep kegs cool? Just curious.

    They are kept either under the bar or behind the bar in refrigerated units.

    As the above has said, they're kept in cooling units beneath/inside the bar area. Think of it as a small, especially cold, fridge.

    some european/euro style pubs keep beer in casks in a cellar.

    Where I worked, the kegs were kept in the cellar and had tubes running throughout the restaurant to the three bars.

    Having been the son of a restaurant manager my entire life, and having seen the construction of many restaurants and the interiors of many many more, I can say with 100% certainty that this is in fact the case.

    Most restaurants have a refrigerated room that contains the kegs with all the different beers they serve, and the beer comes through a line to however many bars the restaurant might have.

    The soda is served in much the same way, except only the "soda water" is kept chilled, the syrups that determine the flavor are usually in dry storage.

    We have a walk-in cooler in the kitchen that is also directly behind the bar. The kegs are all stacked up, and the lines are fed through the wall to the taps directly on the other side.
