So I can set the bones simply enough, but in class the teacher was showing off how to set a "center of gravity" that was basically just a green cross that you place somewhere and then link the bones to it.

How to make that green cross? And how do you link the bones together?

Your question is just wrong on a couple levels. This green cross you're talking about is, I assume, the pivot point which can be adjusted from the hierarchy tab with the affect pivot only button. However, you don't need to change that on bones as they are made with the correct pivot already. As far as linking bones, they are linked to each other as you create them. You keep clicking for more bones and they are linked. To link one set to another set, you click on a bone, then while it is selected start making more bones and it's automatically connected to it.

That however is hard to understand without showing you pictures, so what you should be doing is going through the tutorials that come with max, specficically the rigging tutorial. Then you'll learn properly how everything works.
