Midnight Resistance may have the most epic opening level music in any game ever. I didn't even like the game much, or any of the game's other music, but that opening level. Christ on a bike is that the most epic "Let's go out there and liberate this country I don't even know what the storyline is here but someone is getting their ass kicked" music ever. Fuck.
There's this new cd coming out that's a bunch of chrono trigger fan arrangements. It's a collab between a bunch of artists, and is being headed by the famous Mustin.

Breakdown was a game that, if anything, was hard as balls. The music that played when you took on Solus is probably some of the best "this fight is hard as balls" music I've heard.
Of course any real Breakdown fan (all five of us!) eventually gets good enough at the game to metaphorically push Solus off the jungle gym and steal his lunch money, but that first fight is quite an experience.
The other song I'm posting here was actually the soundtrack of my nightmares for about a week or so. I couldn't get it out of my head for a long time afterward, and it wasn't until I was watching my brother play FF8 that I finally figured out where I had first heard it.
It only plays during a tiny tiny portion of the game, so it's no wonder I forgot. It's a damn shame though, as that is easily one of the best FF8 tracks.

Sin may not have gone episodic like I hoped, but I still have an great soundtrack to listen to. Here's the awesomely Bond-esque main theme to Sin Episodes: Emergence, "What's the World Come To?"

and ya, the original may seem kinda meh now, but compare it to almost any other 8 bit track, its really complex and clear for what they had to work with technology wise.
It sets the theme of the game absolutely perfectly. I'm really disappointed that the 'New Tristram' music from D3 is a kind of industrial sounding ambient track. Really disappointed.
I recently rediscovered just how fucking awesome the Zombies Ate My Neighbors soundtrack is. I believe someone posted a few tracks a million pages back, but it bears repeating
Now I just need to wait for someone to put the Batman: Arkham Asylum soundtrack on Youtube so I can post some of the music that plays when your [strike]taking out[/strike] scaring the living crap out of henchmen.
Mega Man X - Storm Eagle Stage Theme (this guy has done a bunch of MM and MMX covers, and his skills with the guitar are awesome. This particular cover sounds exactly how I'd imagine the storm eagle theme would've sounded if the SNES could do WAV/MP3 playback)

I played this quite a bit and the music is great. This is a remix from Dwelling of Duels.
And I watched a handful of videos from that guy with all the MMX covers. He's damn impressive. Only X song I can play is flame mammoth.
I got a nerd boner when Video Games Live played this on stage last year at Blizzcon 08.
