fish are so diverse though
I mean, I could see you saying that about the fish that are generally classed as whitefish that have firm, white flaky flesh and mild flavor as they do get used for fishsticks, fish tacos, fish patties and so on
but there are so many other fish that vary broadly in taste and texture
king salmon alone is quite different from atlantic salmon
i'm not much of a fan of sea food either sadly, I might like it more nowadays though I havn't had fish in a really long time
when I was about 10 or so, my parents let me try some crab they were having for dinner and I literally almost threw up
I think it was the texture
then years later I tried crab again and fucking loved it
so give it another go, but keep in mind you can have a very different experience depending on the type of fish and how it's prepared

i do like some fish, but the thing about seafood is the smell it all has just turns me off immensely. i had some shrimp a while back and enjoyed it as i have in the past but i had to choke it down because of that seafood smell and i threw up shortly thereafter
same with crab, it's fine, it's just the smell and the packaging that turns me off

an overly 'fishy' smell is a sign that those were not very good shrimp

It's not very "fishy" tasting (relatively) but is entirely delicious
