Dinner ideas

The short of it is, I'm responsible for dinner once a week and I've run out of ideas as to what to make. I'm not particularly skilled at cooking, but I enjoy it nonetheless. To give you an idea, some of the meals I've prepared in the past include:
  • Spicy tomato soup, which is what it sounds like, pretty basic
  • Baked tilapia on a bed of rice and veggies
  • Mini quesadillas (3 cheese w/ chicken), refried beans, rice & veggies
  • Buffalo chicken pizza (handmade) w/ breadsticks
  • Gnocchi pasta w/ alfredo sauce
Usually, inspiration hits me at the last second, but the well has run dry. Any ideas?

    pretty simple, but last night I had a real craving for a veggie omelet. Mushrooms, peppers, onions, broccoli.. simple, filling and good

    breakfast food for dinner is fun on occasion!

    Stuffed peppers are always an easy but delicious meal.

    Steam the peppers on low heat in water to soften them up. While you're doing that, cook some ground beef (1/4lb per pepper) some rice (1/4-cup per) and dice some tomatos and onions.

    Season the ground beef (garlic, chili powder, pepper, salt) and mix it with the rice/tomatoes/onion, then stuff the peppers and put them in the oven for 15-20 minutes more.

    Serve with a side salad and garlic bread.

    Bam.

    Lancashire hotpot!

    Get a big bowl. Stuff some meat in there. Stuff some veg in there. Throw some spices and herbs in there. Cover in gravy. Heat it for a few hours. Eat.

    Bonus points if you serve it with Yorkshire Puddings.

    Stuffed chicken breast.

    Get some boneless, skinless chicken breasts. Pound them out to flatten them out. In a bowl, put some fancy cheese (brie, havarte, gouda, feta,), chopped onions, celery, peppers, garlic and mushrooms with some olive oil and a dash of parsley and sea salt. Mix that up, put in the middle of the flattened chicken breasts, and fold them back together (use a toothpick to keep the two sides in place. Put them in a baking pan (put some olive oil on the bottom if you desire), throw some bread crumbs (the kind you buy in the store in a can) on the sides and top, put it in a preheated oven at 375 for @40 minutes.

    Its really easy to make and tastes great. Plus you can put pretty much anything you want in there, if you don't like peppers, mushrooms, ect.

    Add a salad or some steamed green beans with some bread to complete the meal.

    Slow cooked BBQ pulled pork. You can buy the rolls and the sauce, make the rub yourself, then the prep is really minimal, you just put the rub on, shove it in the oven in the morning, and when it's dinnertime it's ready to eat!

    Last night me and the little lady made pomegranate chicken. Marinated some chicken breasts in pomegranate juice, garlic, lemon juice, dill, and thyme. Cooked the breasts in a skillet, and then made a gravy out of the rest of the juice in the bag we marinated with. Put that over basmati rice.

    Also, hummus and pita bread!

    Get a can of chick peas and some garlic. Put about 5 cloves of garlic in your food processor and hit it a few times until the garlic is fairly finely chopped. Add can of chickpeas, reserve liquid. Hit it a few times. Add about half of the can of liquid from the chickpeas. Add a big spoon of peanut butter, a little parsley, a little basil, I like a pinch of dill, lemon juice to taste, and start your food processor until it gets pretty pasty. Add about 1/3 of a cup of olive oil until it's super smooth.

    I also like to add pine nuts, cashews, whatever you might have in the kitchen that would go well.

    I work with a physicians advocacy group. every friday we get together for movie night. One night they got some chicken quarters, topped them with chopped garlic, sliced red onions, salt and pepper and baked it. Suprisingly tasty and easy. The garlic and onion cook down and then brown, and give the chicken pretty good flavor.

    This weekend I'm going to be using this recipe for pesto. I'm just going to put it on pasta. Maybe some chicken? Get some protein in there for good measure.
