So I just bought myself a shiny new (refurbished) high def console. On it's way is a 360 with 20gb harddrive with my name on it. Unfortunately we in the middle of moving so money isn't flowing as freely as an open stream.
What are a few of the must try 360 games that I should try to pick up that might be had super cheap now?
I just saw Crackdown for $10 at TRU and I think Soul Calibur will be on sale this weekend for $10 as well. Are either worth it? I like just about every genre.
Are there demos and such that I'll be able to waste some time with as well?
Just about every 360 game has a demo online (including your aforementioned Crackdown & Soul Calibur) so download some games that you think sound interesting and give them a shot. Also, every single XBox Live Arcade & XBox Live Community Game has a demo and there are a lot of quality cheap games to be had there.
The best way to start cheap-diving is to download an ass-ton of the demos for XBLA and Community games; there are a ton of great games that will only cost you $2 to $15. There are also 150+ demos of full retail games available on the game marketplace, so browse away.
And if you're willing to wait, you can probably clean up the next time GameStop has a buy-2-get-1 free used sale, though I don't know when that exactly will be. I wouldn't bank on that $10 Soul Calibur 4, since that's part of a larger alleged Best Buy clearance sale and there are going to be so many SlickDeals/Fatwallet/CheapassGamer people hoarding that you'll have to fight tooth and nail to get one right at opening.
For sub-$20 360 games that I recommend, there's Burnout Paradise and/or Revenge, plus Dead Rising. The first Gears should be pretty cheap nowadays too, and if you can find Earth Defense Force 2017 it's mindless fun.
Stuff I've liked that is cheap now:
Bioshock is easy to find in the $20 range.
Crackdown is great.
Marvel: Ultimate Alliance is good if you like co-op or X-men Legends.
Assassin's Creed was pretty good, you can find it for $20 now.
I've been looking at Cheapassgamer a lot recently. They've upgraded their database over the past few months. Now you can search a game and get prices from everyone that sells it. Even better, you can set a threshold price. If a game drops below that, you get an email telling you about it.
Seconding/thirding the XBLA suggestion - tons of fantastic $5-10 games (and a handful of $15-20 ones), and every single one has a free demo. Other than Rock Band and Netflix, I hardly ever use my 360 for anything other than XBLA.
I’ll tell you what happens in Demon’s Souls when you die. You come back as a ghost with your health capped at half. And when you keep on dying, the alignment of the world turns black and the enemies get harder. That’s right, when you fail in this game, it gets harder. Why? Because fuck you is why.
Crackdown is absolutely worth $10. Shit, I let the demo sit on my hard drive and just played that for a week or two before breaking down and buying it.
Soul Caliber may be less worth it, since it's a fighting game that really needs you to have access to some decent competition to reach its full potential. I'd assume that most fighting fans on the 360 have moved on by now to SF4. But for $10 bucks who knows?

You can probably find each of these for $20 or less if you poke around a bit. There are plenty of older retail games on the 360 that are great and cheap. And once you dive into Arcade, it just gets more ridiculous.
Honestly, with the AAA turnaround on the 360, it doesn't take too long for games to come down to reasonable prices. Within a year it's almost a guarantee that the game will be $30 or less.
Oooh - I forgot about R6 Vegas - my favorite vacation spot, I should probably have the game!
Thanks for the input - maybe I'll grab one or two games out the gate and just play demos for a month or so to get an idea what to buy next. With the Wii and DS I did Gamefly for 2 months or so before spending much on buying games, but I think demos will eliminate that need!
Oh, and Braid does look fantastic. That and Pac Man championship have taunted me long enough!
How is the Katamari game on the 360? And how is the backwards compatibility? I never played an Xbox, so I missed Halo 1/2, Kotor 1/2, etc etc etc.
It's perfectly perfect for the licensed stuff. I was able to play Wall-E at release though it and saved $50-$60. It's one of those games that's good, but not worth a second playthrough and something you don't want to end up keeping anyway.

Microsoft will also run xbox live sales, for example 20% off braid or half off alien hominid, again cheapass gamer will usually have this info ahead of time. Amazon also recently got into selling xbla titles and has been discounting them.
You mentioned Pacman:CE, it is on the Namco Museum collection for 360 which is currently on sale at Gamestop for $15 new.
Video stores also usually have used games at decent and sometimes amazing prices, just be familiar with the return policy in case you get a horribly mangled disc. If it installs to the harddrive it will usually be good.
To get demos you just need a Silver account, which is free (just need a hotmail address, as far as I recall). That gives you a friends list, online chat, leaderboards and crap like that. For actual multiplayer you will need to pay for a Gold, but you can get free trials for that (and if you do feel rich and want a full subscription, get a pre-paid card. They're usually cheaper and mean that your card details won't be stored).
Mass Effect. For $20, even if you somehow manage to just play it through once, it's still an incredible bargain.
Make sure to get the Greatest hits edition that contains the DLC and some other stuff for $20 new. Its a space opera rpg with 3rd person tactical shootery like combat.

Got Mass Effect for the PC for $20 as well, hell of a bargain for such a good game. Going through the game for a second time to play as a Biotic (first time was a soldier specializing in assault rifles); Mass effect has strong replay value given all the unique playstyles and different story developments you can take in the game.

This Sunday at Best Buy they are supposedly putting a lot of games on clearance for $10. I plan on picking up Infinite Undiscovery and Pure for sure. Possibly Soul Calibur 4 as well.

Guitar Hero III and Guitar Hero: Aerosmith are each selling for $10 right now. (I picked up both at Best Buy for $20). Gamestop had a deal going where if you bought either you got a free wired guitar. Not sure if that's still active, if it's not Best Buy was selling wireless GH3 guitars for $25.
Banjo-Kazooie Nuts & Bolts is, I think, $20 new at Amazon. Used should be cheaper. And what's more the online community just picked back up because of the recent DLC release.
It's racing + LEGO, and it's great because it is important to be a good driver/pilot and also a good engineer for making the best vehicle for the job. It's super satisfying to outthink a challenge occasionally rather than outdrive it.
