Try switching between standard resolution and HD. Sometimes their servers just don't like to respond and upload things in a timely fashion (...or at all, sometimes - interestingly commercials always run smoothly...). You'll keep your place in whatever you're watching and it usually fixes the streaming problem.
Or just pause and wait for the buffer every 30 seconds.
...I don't think I've ever encountered slow-playing flash video outside of streaming problems.

I've had HD Flash problems before with videos from Youtube on my machine without even playing it full screen, and it wasn't due to server problems. I can download the MP4s from Youtube and they'll play fine with any other media player on my PC, but they run like shit with the Flash plug-in. I'm not sure whether to blame it on the Linux version of Flash or not, but it was using 130% CPU and still running like crap. If I use MPlayer the same video only uses 44-51% CPU with the slowest output driver (i.e. no acceleration at all).

I have the same problem with Hulu fullscreen and with netflix streaming.
I do have a crappy video card but this is a relatively new occurrence, within the last 6 months or so. Like above posters have mentioned it's only with streaming video and only those two sites. My temp solution with Hulu has been to use the little pop-out button, it at least lets me get it to "near-fullscreen" and stay smooth

I have a 8400M, not exactly a bad video card... it's freakin video!
I'm able to full screen on Southparkstudios and my dvds just fine..
