Well, my wife went to the University of Texas Health Science Center Dental school in Houston a long time ago, and while I'm not an expert on this subject, I'd say you need to emphasize your strong dental research (which few folks will have) and meet/excede their minimal requirements for GPA and DAT.
I'd suggest seeing if there's an admission's counselor or such you can email/call and find out if there are any specific requirements they have which you're lacking (e.g. maybe the minimum GPA is 3.5, or they want a 20 on the DAT or such) - just to make sure there's nothing that's going to torpedo you.
Back when she went, there were some challenges because she wasn't a Texas resident (at the time), but we met w/ one of the professors there who was handling admissions, and he discussed different ways we could get around this. It's often very helpful to talk with someone who's part of their decision making process on admissions to find out what they consider "important" (as opposed to "Yes, we require X, but we don't really care about it, other than as a checklist item").
