You should check out Fleet Foxes, maybe Lambchop, although I don't have as much experience with them. Zero 7? Morcheeba? Some Portishead? Maybe Air? I may be way off base with some of these. Iron and wine are very gentle and folky. Sigur Ros is nice and relaxing for the most part. Ummm...for ambient stuff, Brian Eno would be a good starting point I guess.
The soundtrack to the film inspired me to search out space ambience, and there are artists devoted entirely to that subgenre, so if you enjoy spacey-noise mellow and its pensive feelings check out some artists like Murcof, Carbon Based Lifeforms, or Solar Fields (though he tends to implement more significant beats or else go full on techno. Chillest I've found so far is his album 'Movements'.)

Yeah, I didn't want to post a cover (Jose Gonzolas doesn't do too many) but I couldn't find any other songs of his that were decent quality on youtube... his new cd is really good though
That NiN song was good, didnt know They(He?) had touched that style
You might want to check out the rest of Still, the album that Adrift And At Peace is off of. He has some stripped down/piano versions of some of his other songs (Something I Can Never Have, The Fragile, The Becoming, The Day The World Went Away) and some instrumental tracks (Gone, Still; Adrift And At Peace, The Persistence of Loss, Leaving Hope) and one new non-instrumental track (And All That Could Have Been)
You should also give Ghosts I-IV a try. 36 instrumental tracks, 'rainy day music' as Trent calls it. I find it to be great 'thinking' music when you're working on something. You can download the first 9 tracks (Ghosts I) from nin.com
Also, other mellow NIN tracks: A Warm Place (from The Downward Spiral), La Mer (from The Fragile), Ripe (With Decay) (also from The Fragile)
