I purchased a new BluRay player for the cheap at work the other day and I'm now trying to build a library of great movies I can watch over and over, but also ones that really showcase my system (58" 1080p plasma and an Energy surround sound). Any ideas?

This is important. For some bizarre reason, the version that was originally released in the US under ( National Geographic? ) removed David Attenborough's commentary. IIRC they replaced it with Sigourney Weaver.
I still wonder who in the world thought that was a good idea. Not to knock Weaver, but seriously you do not dub over David Attenborough, it's not like he's speaking a different language or anything.
Iron Man & I am legend both have amazing sound and picture.
The Iron Man soundtrack is very much your action movie soundtrack but done realllly well. I am legend will show both sides of your system - The action sequences are cool but there are some very well done eeeerie silences with the odd bird noise far off in the distance behind your shoulder.
I also put my vote in for Speed Racer and The Dark Knight. I haven't seen Wall-E yet... I'm gonna have some friends over for dinner and I figure we can watch it then.

Ah man I can't believe I skimmed this thread earlier and forgot to demand that you buy Sunshine.
There is a beauty in that film I cannot describe. While I've rented the likes of Planet Earth and Band of Brothers and found them to be superb, Sunshine is the only BluRay I actually own. Buy this film and experience the crushing infinity of space in your very own home.
Do you like Lost? If not, you should. If you do, Seasons Three and Four both look goddamned amazing and are easily the best-looking Blu-rays I've seen.

I'm in the minority when I tell you that Weaver is a billion times better than the british guy whose name I can't even be bothered to spell right.
This is a direct opposite reccomendation, but stay away from 300. Both the DVD and the Blu-ray are shit. They kept the film grain from the theater version and it just looks awful in Blu-ray. It's distracting.

Its was intended to look that way to recreate how it looked on the big screen. The film grain might not be to everybody's tastes but I feel maintaining that theatrical image is pretty important. If they took all the grain out and cleaned up the image it could very well have taken away from its distinctive visual style. To each their own though.
I recommend Sunshine which has absolutely superb special effects and some breathtaking space sequences that look great on a big screen. If you like Japanese animation Vexille is also extremely impressive on Blu-Ray, Appleseed Ex-Machina probably is too but I haven't watched it yet.
Be sure to check out www.blu-rayboxsets.com. I've been using this for about 90% of my blu-rays and PS3 games since June, and have saved a ton. You can get a lot of blus for less than $15...I got each of the Terminators for around $8! If you're ever bored, I would recommend heading to the site, sorting by price (low to high) and just see what movies you see at the sub-$10 level.
I thought 300 looked gorgeous on my tv. Some of the scenes, such as the oracle, are simply mesmerizing.
But I'll second Nightmare Before Christmas, as well as Sleeping Beauty if you have kids. Also Young Frankenstein really impressed me as well, as long as you can overlook the purposeful grain.
Avoid 28 Days Later at all costs though. I was so disappointed with that. Ugh.

Speed Racer looked amazing, and 1080p really highlights the bizarre lack-of-distance-blur stuff they did throughout.
Serenity has good video and an amazing TrueHD soundtrack. It's the best I've heard since I upgraded my audio equipment. The Matrix looks pretty good and also has great audio.
And yes, anything CG looks fantastic. The most impressive I've seen thus far is Bolt, which is also a pretty fun movie. Ratatouille is also gorgeous.
One random note on audio tracks for those who can do TrueHD/DTS-MA: I notice that many BDs with HD soundtracks do not default to them, but rather default to the standard DD5.1/DTS soundtracks. The difference is pretty striking (to me, at least), to where I can generally tell by listening for a minute or two whether it's an HD soundtrack or not. Don't know if it's a feature of the disks or the player (I use a PS3), but there you go.

I seem to see King Kong and Cars often cited in TV reviews, a lot of people seem to hold those as pretty solid blu-rays. Though let me tell you if your TV sucks at displaying reds Cars is going to let you know.

Looks absolutely stunning, quite expensive though, and it gets confusing with the different versions and such..

Really the best source I am aware of for Blu-ray picture quality ratings. They have yet to lead me astray.
If that's a TV or monitor you can get an HD Fury adapter.

Anything computer animated, certainly. Hand drawn is almost impossible to tell the difference when using a good upscaler.

Personally I want to see Children of Men on blu-ray. That film was drenched in grit, dripping in glorious detail, the more the merrier.
