Wasn't sure where else to put this so I'm making a thread. Hopefully it can help some others, too.
It's finally become apparent that I can't go without a PSP any longer. There are too many games out and on the horizon, and so I've decided to bite the bullet and pick one up.
The problem is: Which one do I get? I am not a fan of digital only, so waiting for the PSP Go isn't really something I'm going to do, but beyond that, I am lost. Do I get a 2000? A 3000? Do I search for the fat one? Are they even different enough to matter?

Since you want games that are coming out in the future(and obviously aren't concerned about homebrew apps) I would recommend a slim one as I think the battery they come with has a longer life.

I'd recommend the 3000. Perhaps the Rock Band Entertainment pack would interest you? It comes with RB: Unplugged (which is basically Frequency/Amplitude with a Rock Band paint job), a voucher to download School of Rock off the PSN, and a 4GB memory stick.
Personally, I'd go with a 2000 with an older board and put CFW on it. The better battery life and faster loading times and not carrying around a bag of UMDs are too good to pass up. But if you're absolutely sure those are things you don't care about, yeah, get a 3000.
Finding an older 2000 can prove difficult. Amazon and best buy both have them for sale, but they are generally the newer ones.
If you can find an older 2000, then go for it, otherwise get a 3000. (The biggest benefit of CFW is you can rip your UMD games to memory stick. This allows you to carry multiple games at once without having to lug UMDs, gives you faster loads and improves battery life.)
I’ll tell you what happens in Demon’s Souls when you die. You come back as a ghost with your health capped at half. And when you keep on dying, the alignment of the world turns black and the enemies get harder. That’s right, when you fail in this game, it gets harder. Why? Because fuck you is why.

Also with a little trickery you can make yourself capable of taking screenshots from the PSP. It's so awesome and handy.

So you don't think the 3000 will ever be sufficiently hacked then? Because the difference between 2000 and 3000 is no slouch. If there's ever a chance at having a 3000 with homebrew, I think you'd want that.
Doom, Heretic, Hexen, Quake. Also Duke Nukem 3D but it didn't turn out too good (can't save and it's unstable).
There are loads of homebrew apps, although typically you'll only use the few you need. I have a streaming online video viewer (works with most youtube-like sites and lets you either stream directly or save for later), and a comic book app. Access to PS1 games was also a big thing for me, stuff like the old FF games are perfect for the PSP. The SNES emulator looks great too, haven't got round to trying it yet.

For some reason I thought this said ash tray and was totally thrown for a second.
FYI, the PSP-3000 is broken - it's just not loading the CFW straight off the flash. You need 5.03 firmware and need to do a boot/launch loader/launch exploit sequence every cold boot though, so it's not nearly the same level of boot-and-go as the PSP-2000.
So in other words, it's just a matter of time.
But for now, buy a PSP-2000 and a nice big Memory Stick, and claim that you have a "PSP Go dev unit" when people ask you :P

Cosigned; I was even going to point out the Dell sale, but you beat me to it. Aside from Cave Story, I've never really screwed around with homebrew, barring the one app that lets me rip my UMDs straight to the memory stick. The vastly improved loading times and battery life is incredibly worth the $15 of materials and 45 minutes of time you'll spend installing a custom firm. Rock Band Unplugged is a great example: I played it on UMD first before I installed it, and the initial loading was maybe 5-10 seconds. On the memory stick, it loads in about 2 seconds. Build up loading before every song and mini-loading when switching menus, and it's clear the game shines in digital distro.

I'll admit the 1000 does have kind of a sexy build quality to it, but as a portable gaming device getting something that's almost half the weight is really a no-brainer.

I think it's pretty much pot luck but I would fancy your chances, from what I remember the vast majority should be hackable. I got my PSP 2000 from a clearance store a bit over six months ago that had bought a ton of PSPs off retailers wanting to make room for 3000s and I hacked that no problems. This Dell stock is probably a similar deal.

Things can be light and compact without feeling cheap and flimsy. My iPhone? Light, compact and solid. No, I stand by my statement, the newer PSP's (with the exception of the PSPGo, since I haven't man-handled that one yet) feel like they could be snapped in half like balsa wood.
I love my PSP 2K. Frankly, I've seen a 3K in action, and the screen just bothered me too much to even consider it. The ghosting was pretty noticeable for me.
Also, Wagic the Homebrew is Magic the Gathering for the PSP. It's awesome although it's still primitive. (Just this latest version we got counterspell.) But it's open source so you can add your own cards if you want to add the official cards or if you want to play with a joke set like Naruto or Final Fantasy or something.

I would not expect the dell 2k psps to be the older ones. Dell isn't a clearing house and generally keeps their supply line fairly trim. I think the deal ends tomorrow, so don't take too long to decide.

I think I'm leaning toward a 3000 at the moment. CFW seems neat but not really a big enough draw to neglect the improvements of the 3000.

Well, your other bundle options are Rock Band, Ratchet, and/or Daxter(not likely you'll find this, it was a 2000), so at least there's a chance you'll want the Dissidia one. :P
Rock Band: Unplugged is actually pretty damn fun. Try the demo... (warning demo does not let you finish the whole song)
Its like frequency/amplitude I'm told. I never played them myself. However if you are a button tapping god you might find Unplugged too easy. (I'm not that great myself. I can do all the songs on Hard, but only really 4 and 5 star the easy ones, and sometimes fail the harder ones)

Honestly I'd probably just not get a pack-in and just buy the core system a game and a 4 gig card

A 1GB is enough for just saves, but if you're looking for digital distro down the road (or you custom-firm for your own UMDs) it's worth it to get the biggest stick you can afford. Even if you bought a bundle and traded in the game, at most you'd get $20 for the game, meaning the 1GB still cost you $20 overall.

True, you don't need it. Just as long as you acknowledge that you're willingly accepting increased loading times and lower battery life. ;-)
Though I wonder if someone's ever done a speed comparison between an official digital version of a PSP game and a ripped UMD version on a custom-firm PSP. I would think they'd be the same, but in one of the more recent updates there was a high-speed memory stick option that let you increase loading speed beyond what was normally open (though it crashed some homebrew applications).

Without CFW you have a "portable" system with bad loading times, bulky media and very limited battery life. I wouldn't recommend a PSP to anyone without it unless they were okay with never taking it outside.
