What are the apps and customizations and so forth that I should be jumping on and making use of? What should I know, as a new iPhone owner? What is there to take advantage of that I might not know about?

also the remote app that apple makes to control itunes over wifi is AWESOME.
Pocket God is kind of entertaining although it's getting a little old. Worth the $0.99 though.
Pandora is awesome.
If you are a baseball fan the MLB At Bat app is well worth the $10.
Amazon's app is pretty good if you buy lots of stuff from Amazon.
Shazam is really cool.
Didn't really use 3rd party apps much. Want to try out the VNC client but haven't gotten around to it.

as far as games go, i personally like Lux DLX (its risk) and Top 3 Solitaire. Get this solitaire since it has klondike, free cell, and spider all in one. Most only sell each mode seperately.
Useful Stuff: Discover lets your iPhone work as a wifi-based thumb-drive. The Kindle App is awesome if you like reading. Try out a free book to see if you like it.
I'm upgrading to the 3.0 software right now, as well, although I've never used iTunes.

Some other apps I like that he didn't mention KPCC (LA's NPR affiliate) and KROQ. GeoDefense (awesome tower defense game). Stanza (offers some free e-books), Yelp and FML (fuck my life - funny stories). Also Pandora if you don't use LastFM

Also AT&T has a nice app that allows for more iPhone friendly account viewing. You can even pay your bill with it!

its nice to set it to phone favorites for those of use who only call a few people most of the time, but have a lot of contacts. though if the ipod app is running, a double tap always brings up the mini controller that links to the ipod app itself
really, its more silly to link the "normal" double click to the ipod app, because usually when listening to music you're not using the other parts of the phone anyways.
if the double tap didnt go to ipod control when playing music then you would have a better point
