I just got a PS3 on Friday and I am thoroughly enjoying it.
Killzone 2 is omgwtfbbq amazing, and Force Unleashed is also quite awesome.
MGS4 also came with it, but I've always hated MGS and this one manages to be just as obnoxious.
ANYWAY
Are there any other must-haves for this console that I need to acquire? I mostly enjoy shooters and western RPG's. Some adventure games, if they are well crafted.
Secondly... is there some sort of microphone peripheral for online play, or will any USB microphone do the trick?
Uncharted is a great adventure/shooter game, and the sequel will be out soon.
Folklore is a great action/RPG and you can pick it up for cheap now.
I know you specifically said western RPGs, but you should still give Valkyria Chronicles a try. It manages to break out of the JRPG mold and mixes strategy with some minor stat building and a great story.
You should totally get Ratchet and Clank Future: Tools of Destruction. There's a downloadable sequel that's pretty rad, too. More puzzle-y and less action-y, but lots of fun.
I'd also recommend both Uncharted and Infamous. And although MGS4 has a lot of the crazy Kojima storytelling nonsense, there's some great gameplay in there. The best way to play the game is to skip the cutscenes, in my opinion.
I'll split up the exclusive and multiplatform games because I'm not sure if you've got a 360 or decent PC. If you have, I still recommend all the games listed for either system.
Exclusive PS3 games I'd highly recommend:
inFamous
LittleBigPlanet
Ratchet & Clank: Tools of Destruction
Uncharted
Valkyria Chronicles
Mutliplatform games I'd highly recommend:
Burnout Paradise
Dead Space
Fallout 3
Mirror's Edge
Prince of Persia
Sega Mega Drive Ultimate Collection
PSN games I'd highly recommend:
Bionic Commando Rearmed
Everyday Shooter
flower
Lumines Supernova
PixelJunk Eden (+Encore expansion if you like it)
PixelJunk Monsters (+Encore expansion if you like it)
Super Stardust HD
Wipeout HD
As for headsets, I'm not sure about USB ones, though I know the old PS2 ones do work. There's an official Sony headset around (which was included with EndWar and SOCOM Confrontation) but you don't have to use it. Any bluetooth headset should work with the PS3, so long as it syncs properly (I've got a Jabra headset).

You absolutely must get Littlebigplanet.
Uncharted was also really good.
I have always enjoyed the Ratchet and Clank games, but the newest one was basically devoid of any real challenge (which I usually don't mind) and it changed the weapon system so none of the weapons were as interesting and the upgrades weren't as noticeable.
Valkyria chronicles is a really good strategy game, unique gameplay, which is kind of rare these days.
Red Faction: Guerrilla is fantastic as heckfire.
Also if you like first person shooters, get CoD4 for the love of god, I need someone to play with.

I'm currently using a Logitech USB headset for voice chat on my PS3. I believe that any USB headset that meets the USB audio spec (most of them) will work in addition to any Bluetooth headset.
Edit: Also, you don't necessarily have to buy the Sony branded webcam for video chat. I've been able to use the Logitech S5500. I think you can also use the built in microphones for chat as well, although I haven't actually tried that yet.

Not that I want to turn this into a topic on MGS4, but my big problem is that when you take MSG4's story telling method, and you compare it against something like Force Unleashed, MSG4 just comes off as shameful.
Force Unleashed finds a way to keep you in the action for 95% of the game, and MSG4 specifically takes you out of it. I spent the first 20 minutes of MSG4 watching cutscenes, and the only quicktime events were for the stupid flashbacks. I'll play it when I am extremely bored. Which doesn't seem to be happening anytime soon.
Jasconius I don't know if you saw that there was a sale going on this week on PSN but you need to pick up Pixeljunk Eden for $5 if you don't have it already (check the Demo) and Wipeout HD for $15 is a steal if you like that weird mix of arcade and hardcore competitive racing. Savage Moon, if you're interested in Tower Defense, is also $5.

Bomberman Ultra is also out on the PSN for like $10
Your timing on your new ps3 is perfect. There are some really good deals at Gamestop for used games going on right now. There's a buy 2 Get 1 Free sale going on for all used games (ends today), here is a 20% off coupon for used PS3 games (good for another 5 days or so), and there are certain used games that have $5 or $10 or $15 off stickers on them (LBP is down to $40 from $55). With the PSN sale going on right now, I bought 6 games this weekend for about $60.
My 2¢:
Uncharted is ridiculously good.
R&C is great, if a little too similar to the rest of the R&C series
Burnout Paradise is THE racing game to get, and the DLC is keeping it fresh
I really enjoyed Bioshock, if you haven't played it already
I thought Resistance was pretty good too, but the consensus seems to be that it's just average
Echochrome is a fun puzzler on PSN, but I'm really into those types of games, so check out the demo
I didn't like the new Prince of Persia as much as last generation's series, but I think it's really cheap now
LittleBigPlanet is a PS3 necessity.
I found Motorstorm for $5 at Sears and was pleasantly surprised. I'm now looking into Pacific Rift.
I'm looking at the videos. And I have no idea what I am looking at.
Yeah, it seems like it needs to be played to be understood. I bought it last night for $5, and after I played a level or two, I started to get it and it became really fun.

I recommend it, the acting made me laugh and the story was interesting enough.
that said, I've been a ps3 owner since launch date and I'm ashamed to admit I haven't been keeping up with the games.

edit: Also, Infamous and Uncharted are pretty good from what I've mooched off of friends.
