Skip to NWN2. You're not missing anything by skipping the first one.
When you get to BG2, be forewarned that A.) most people HATE the opening (Tutorial) section, but it has a huge amount of opening story in it. Soldier on. B.) After the opening you will be dumped in a huge area with a pat on the back and a "good luck". It is a sprawling game that takes a bit to get into. However it also has a first rate story and some brutal combat if you don't cheese it.
Planescape: Torment. Ahh Planescape, the gaming love of my life. Usually considered to have the best writing of any video game ever made. Can't say I can argue with that. Combat is basic, but it's one of the few games where strength and dexterity are the least useful stats you can have. Explore everything and talk to everyone you can.
Oh, there's a mighty fine thread around here about the Black Isle games. I'll try to find it and link it. Has some nice info on patches for BG2 and PS:T. High res and such.
Oh, last note. I love Arcanum, but it is horribly unfriendly, fiendishly hard, blatantly unbalanced and has one of the worst/least intuitive interfaces known to man. Still love it though.

On topic: the suggestions in here are great. Shiren and Etrian Odyssey 1/2 have my votes especially.
