Mexican isn't a race. It's an ethnicity. For most of American history, Mexicans were considered white.
The entire American idea of Latino as a ethnicity is pretty damn silly. Central and South Americans can have virtually any complexion or physical appearance. In plenty of their countries race is a major internal issue on it's own. Hell Brazil arguably has more fucked up racial issues than the US.
That's just the Portugese fucked their women and made some half breeds.
