Breaking up with a Mobile Service Provider

So, the wife and I are looking to drop T-Mobile for greener pastures. Best order of operations?

1) Cancel the current service, paying whatever fees, then sign up with the new provider?

2) Sign up with the new provider, then cancel our old T-Mobile services?

I'm sure this stuff happens all the time, so I'm curious to hear some thoughts.

    I think it only really matters if you want to keep your phone number... in which case I would contact the new provider and ask how you should go about that.
