I'm trying to find gifts for three people. Ideally, the budget is $30 for each.
The fisherman- He is retired. He fishes. It's pretty much what he spends most of his time doing. He fishes fresh water, does night time croppie fishing a lot, and never fly fishes.
The EMT- He is recently an EMT. Its a new thing for him, he is very excited, its pretty much the biggest thing going for him right now.
Bird lady- Loves finches, just built an outdoor aviary for her personal flock.
Assuming they already have the equipment for their hobbies, how about a nice big framed photograph of a fishing hole/aviary, or a fish/bird wooden carving figurine?
The last time I went fishing it actually wasn't fishing, it was buying fish at the grocery store, and I actually don't eat fish so really it was buying potatoes, but I think if I did go fishing it might be nice to have some snacks to munch on while I wait for a fish to munch on the last snack it ever eats, so maybe you could buy him some of that fancy flavored popcorn? Like kettle corn, caramel corn, chocolate covered kettle corn, chocolate covered caramel corn, chocolate covered caramel kettle corn, etc.
Dunno about the EMT, maybe buy him a knife so he can do tracheotomies whenever he wants.
For the bird lady if she likes birds like I like birds then she'd like a nice fancy hardcover book with drawings and/or pictures of birds. Those are tons of fun.
Well, this would depend greatly on the other predilections of the bird lady, but The Beak of the Finch, by Jonathan Weiner, is a great book detailing the work of the Grants, the naturalists/biologists who studied the so-called Darwin's Finches on the Galapagos islands. There's also the Audubon Society Field Guides to North American Birds (there's one for the East and one for the West). They contain a lot of beautiful images and are useful for bird watchers:
EMT's have a lot of downtime, a good book or something while they're sitting around waiting for a call would be best. Or some other way to kill lots and lots of time when they're on call.

EMT's also have to go out at any time in any weather. This time of year, that generally means cold. Maybe some nice gloves, a stocking cap or some reusable handwarmers? Some convertible mittens might work. Though they might be frowned upon in his line of work (I imagine they'd be difficult to keep clean).
That site that Stravinsky linked has some good stuff to. I like the shirt that says "Never do anything you don't want to explain to a paramedic".
I did happen to find on Amazon at one point an EMS knife/flashlight combo set. Not sure how much of their equipment is provided, so I don't know if that would actually be something he would have a use for.
