There are literally only two reasons why a party holds their convention in a particular state. Either they're trying to convert a state to their side or they're trying to prevent a state from converting to the other side. The only reason the DNC would choose to hold their convention in North Carolina is because they feel they can make progress in pushing the state more blue. The only reason RNC is holding their convention in Tampa Bay is to try to prevent Florida from flipping blue.
If unions are pissed with how NC treats unions, is there any other better way to change that than the state becoming more friendly to Democrats during elections???
There is a third option: Saying "we like the way this state is run and want to show that we support its current course".
Which by the way is going to be at least part of the story in Tampa.
Or a fourth option: "we don't really like those nasty unions, we hate them as much as the people of NC do".
Alternative presentation as: "We are not the Hippie, Union supporting Dems of yesteryear, we are patriotic american supporters of Job Creators. The Real American Heroes"
The fourth option by the way is pretty much the DNC stance for the last 30 years. The DNC has sold Unions out time and time again. If Union financial support of the DNC was a investment in the Stock Market, the SEC would be involved.

Here's a trick I learned a few years back: whenever I need something fixed in my house -- the plumbings not working, the stairs need fixing, whatever -- if I don't know how to do it myself or don't have the time, I call the nearest relevant union local and ask for a referral for a tradesman. Last time I did this, someone had tried breaking into my house and damaged the doorframe. I called a non-union subcontractor first to ask for a quote to repair the damage, and they said it would cost me about $300. The carpentered I had referred to me through CJA said he would do it for $80. I gave him an even $100 because Jesus did he ever underbid.
So, after thinking about this on the way home I decided that it's not really in the money that's bothering me. Because like a few people pointed out, it's only the DNC that they are withholding money from not candidates.
It's more that this is another instance of Dems having to herd cats. You rarely hear about a big conservative constituency withholding their support, but the Dems seem to be pissing off/disagreeing with somebody in their own party every other day. It's exhausting being the "big tent party" sometimes.

One should also remember that the unions are not the DNC's only interest group and it'd be stupid if they only listened to them.

The Republicans are also made up of often incompatible factions (small government, Christian fundamentalists, racists, neocons, a few actual conservatives, the rich), but they do a better job coordinating/pandering/unifying-through-hate than the Democrats.
