XXblandXX, have you been eating Albacore or Chunk Light tuna? Albacore tends to have a higher mercury content, because it's a bigger fish than the Skipjack (chunk light). Chances are, you won't have any adverse effects, but if you've got a general family doctor, you might want to mention that you've been eating canned Albacore nearly every night for 2 years.
I'm a week away from having the rest of my kitchen gear down in the new place and I gotta tell you, I'm pretty fucking happy about that. Going to cook all of the things.
Because I barely know how to cook, I've been eating the following for dinner for the past two years:
1. One bowl of white rice
2. A quarter of a bag of mixed frozen vegetables
3. A can of tuna or salmon
I eat this every evening because it's so easy and seems relatively healthy. I use a rice cooker for the rice, steam the tuna/vegetables to my liking on the stovetop, put it all together, and eat. But, I'm looking to mix it up a bit because I'm bored of this, and no, I don't want to eat greasy frozen dinners.
Are there easier things to prepare and eat, that are just as healthy? I barely know how to cook as it is, so please keep recipes as simple and as healthy as possible.
The amount of preparation your doing for this meal is a tad above what some people do so ill use that as a baseline. I suggest you invest in a good slow cooker (NOT a crock pot...you want something with a metal pot on top of a hot plate. Much easier to clean/use then a ceramic crock pot) and a reciepe book for slow cookers. They take little preparation (Usually you can start it before you leave for work and have it ready when you come home). and are going to be lots better for you having a diverse diet then eating the same thing every day.
on Google., which leads me to believe it is not a common idea. And I only one of those uses pickled beet eggs like I am going to use...

Hamburger Helper would be adding diversity to this guy's diet and at least he'd learn how to cook meat and pasta/rice while following pretty damn hard to screw up instructions.
So I went with something sort of like the first recipe there. I boiled eight eggs from my grandparents' chickens, which made about the same volume of six big bland store-bought eggs, set a few aside, so I had about the equivilent of four eggs, and chopped them up. Then I fished three beet-pickled eggs out of the jar and chopped them up. I mixed them together in some tupperware, added about half a cup of mayo, some garlic pepper salt blend, some paprika and some parsley. I am letting the salad cool now.
If I had one suggestion for anyone trying to start cooking their own dinners on a regular basis, it would be to pick up a slow cooker. If you're not comfortable making your own spice mixtures just buy the pre-packaged McCormick slow cooker spice pouches.
The process is literally just throwing everything together in a pot and hitting a switch and waiting. I am yet to make a slow cooker meal that wasn't at least good. Can always keep making the rice in the rice cooker and have it with a nice saucy slow cooker dish.
I got a great one (I think Hamilton-Beach) for like $40 on Amazon.
Slow cookers are awesome. We should use ours more. I do wonder about the nutritional values of stuff cooked in it some times, because some things taste really salty, but I haven't really used ours enough to have real opinions about things

I am planning on trying to make a persian luleh kebab tonight, using ground lamb, some indian spices, yogurt, cucumbers, and basmati rice. Either that or shrimp and grits, if I decide I want to drive to the asian market for fresh shrimps.

Having had lunch there today, I can see why. They have 4 different regional variations, I went with "The Lebanese" which was spiced chicken + lettuce, fries, & pickles with garlic sauce in a pita. It was amazing.

The tomatoes were really nicely ripened and I had some sharp cheddar (which is a rarity here).
It made me so, so happy.
Also it fit into my dieting plan calorie-wise!
