i am only just now beginning to figure out about cooking

it turns out it is the best thing in the entire goddamn universe

did you know you can create happiness from nothing but fire and onions

damn you, now i crave assorted shish kebab

if only i hadn't burnt the garlic i was roasting last night, that would've made for optimal satisfaction of face-stuffing cravings

I feel like that much tuna might be unhealthy. I'm sure someone else here knows a legit reference for mercury content and all that ish, though...

    I had the same thought.

XXblandXX, have you been eating Albacore or Chunk Light tuna? Albacore tends to have a higher mercury content, because it's a bigger fish than the Skipjack (chunk light). Chances are, you won't have any adverse effects, but if you've got a general family doctor, you might want to mention that you've been eating canned Albacore nearly every night for 2 years.

I have decided that I am going to make a pasta sauce with canned tomatoes and roasted red peppers and cream and italian sausage and basil.

that sounds like the best thing to me right now.

Oh my god this is so good.

Steamed some broccolini with a little garlic on the side and I'm in heaven.

I've never heard of cream in a tomato sauce. I'm scared.

    Make a vodka sauce.

    mmm...vodka sauce.

I'm a week away from having the rest of my kitchen gear down in the new place and I gotta tell you, I'm pretty fucking happy about that. Going to cook all of the things.

Today when I got home I had a BLT for dinner.

The tomatoes were really nicely ripened and I had some sharp cheddar (which is a rarity here).

It made me so, so happy.

Also it fit into my dieting plan calorie-wise!

Because I barely know how to cook, I've been eating the following for dinner for the past two years:

    1. One bowl of white rice
    2. A quarter of a bag of mixed frozen vegetables
    3. A can of tuna or salmon

I eat this every evening because it's so easy and seems relatively healthy. I use a rice cooker for the rice, steam the tuna/vegetables to my liking on the stovetop, put it all together, and eat. But, I'm looking to mix it up a bit because I'm bored of this, and no, I don't want to eat greasy frozen dinners.

Are there easier things to prepare and eat, that are just as healthy? I barely know how to cook as it is, so please keep recipes as simple and as healthy as possible.

The amount of preparation your doing for this meal is a tad above what some people do so ill use that as a baseline. I suggest you invest in a good slow cooker (NOT a crock pot...you want something with a metal pot on top of a hot plate. Much easier to clean/use then a ceramic crock pot) and a reciepe book for slow cookers. They take little preparation (Usually you can start it before you leave for work and have it ready when you come home). and are going to be lots better for you having a diverse diet then eating the same thing every day.

Has anyone ever made egg salad with pickled eggs? I only found three recipes--
    http://www.food.com/recipe/pickled-egg-salad-373871
    http://huggingthecoast.com/2009/07/28/venusian-pickled-pink-egg-salad-recipe/
    http://www.cookingchanneltv.com/recipes/dilly-pickled-egg-salad-recipe/index.html

on Google., which leads me to believe it is not a common idea. And I only one of those uses pickled beet eggs like I am going to use...

I am going to do it, I will get back to you guys.

Hamburger Helper would be adding diversity to this guy's diet and at least he'd learn how to cook meat and pasta/rice while following pretty damn hard to screw up instructions.

A BLT sounds good right now.

So I went with something sort of like the first recipe there. I boiled eight eggs from my grandparents' chickens, which made about the same volume of six big bland store-bought eggs, set a few aside, so I had about the equivilent of four eggs, and chopped them up. Then I fished three beet-pickled eggs out of the jar and chopped them up. I mixed them together in some tupperware, added about half a cup of mayo, some garlic pepper salt blend, some paprika and some parsley. I am letting the salad cool now.

If I had one suggestion for anyone trying to start cooking their own dinners on a regular basis, it would be to pick up a slow cooker. If you're not comfortable making your own spice mixtures just buy the pre-packaged McCormick slow cooker spice pouches.

The process is literally just throwing everything together in a pot and hitting a switch and waiting. I am yet to make a slow cooker meal that wasn't at least good. Can always keep making the rice in the rice cooker and have it with a nice saucy slow cooker dish.

I got a great one (I think Hamilton-Beach) for like $40 on Amazon.

edit: Azith beat me to it =(

Slow cookers are awesome. We should use ours more. I do wonder about the nutritional values of stuff cooked in it some times, because some things taste really salty, but I haven't really used ours enough to have real opinions about things

My fear would be to leave a slow cooker/crockpot on all day when i'm out of the house.

Come home to a house on fire. I'm being irrational I know but still.

Well, just get a stone cutting board to put the unit on, mount it on top the stove and leave the vent on. make you feel better. You leave your tv plugged in all day right?

What is/was for dinner? Was it delicious?

I am planning on trying to make a persian luleh kebab tonight, using ground lamb, some indian spices, yogurt, cucumbers, and basmati rice. Either that or shrimp and grits, if I decide I want to drive to the asian market for fresh shrimps.

so this whole shawarma obsession triggered by a certain movie reminded me that a place a short walk from my work is locally famous for it's shawarma.

Having had lunch there today, I can see why. They have 4 different regional variations, I went with "The Lebanese" which was spiced chicken + lettuce, fries, & pickles with garlic sauce in a pita. It was amazing.

I fell for the same craze and went to the only Lebanese joint in northern Virginia. Unfortunately it wasn't true shawarma... Just some marinated beef
