    I don't know if this would fall under the category of poaching, but dropping the egg into the deep fryer @ about 350° for two minutes is an unbelievable experience. They come out brown and crisp on the outside and deliciously runny on the inside.

    Latest update from the guy who's done the translation is that the kickstarter won't begin funding until Tenra Bansho Zero has begun shipping out to backers

    which is completely understandable, and kind of admirable, since a lot of places seem to work on a basis of "this kickstarter is done, fire up the next one before anything has been been produced"

    also I am totally going to be a late upgrader for the hardcover edition, because these two look great

    hollandaise is easy. I mean I can't make it from memory but it's not HARD if you have the right tools.

    The hardest thing in the world to make is candy. If you ever see "make sure the melted sugar reaches a soft ball/hard ball" you know shit just got real and you better put your big boy pants on.

    But as with any cooking, having the right tools is half the battle
