How can you even make money running a bar in Star Trek when you're just serving the same instantly materialized food as everywhere else? How is there even still money?
The Federation doesn't have money within its own borders. Deep Space 9 isn't in Federation borders, and that doesn't mean nobody else uses money (as they plainly and repeatedly state they do!). Federation officers on a station like Deep Space 9 are almost certainly allotted money-equivalents that allow them to make purchases that the other party can trade back to the Federation government for energy, information, or other resources.
Why would someone on Earth or another socialist planet run a bar? Because they want to. People will still want a place to drink and socialize together even if they can replicate drinks at home, and the person who creates a space that people want to go to will earn themselves social prestige and guanxi within their community that they can trade on to get other things that they want.
I think a lot of people who run businesses would continue to do so without pay if needs were totally removed from the equation
the thing is, nobody would work themselves to death
the "price" of labor would be extremely high, you'd have to have a work environment that people wanted to be part of. One's occupation is likely one of the highest forms of social currency. We're also told that replicated food and drink are not as good as the real thing, and wine from a real winery like Picard's would be highly prized
lack of money is one of the dumbest constraints of the universe, and I think it can be most easily handwaved by the privileges starfleet personnel have in the forms of transit (they have transporter credits) and likely superior access to things like holodecks

A&M couldn't hit and TCU left multiple runners on base every inning. It was bizarre.
At one point A&M managed to close an inning with the bases loaded against TCU's best batter because he hit a line that smashed into A&M's pitcher, which then immediately bounced to the first baseman.

I actually think the fact fans get pissed when things don't go the way they'd like for characters is very much a function of their engagement with them. Ideally, the viewer desires the candy-coated (or vengeful) ending for the character in question even in spite of theme or narrative because they just have that strong of an emotional reaction towards them. This is good! The viewer doesn't write the text, the author does, and the viewer doesn't have to think like the author, in feeling their genuine opposition to what the author is writing they are unwittingly engaging the author's version of the text. The viewer ought think like the viewer.

A huge portion of the games industry is basically people taking a lifelong kick in the junk to do what they want instead of what makes the most money.
A huge portion of most industries is this, if you define "doing what they want" as "not dying, buying food" and such.
The games industry does seem pretty lousy for it though
In the worst non-intern cases I've seen, people with 4-year degrees getting paid minimum wage and having to bus in to see if work is even there that day, working in terrible environments in constant physical contact with all the other testers. It gets pretty gross sometimes.
