Catfingers, Giant Woman, Steven and the Stevens. That's what did it for me.
Also, the one where Stephen and his dad go to the storage unit is pretty self-contained I think and shows that relationship really well and has them chucking Amethyst at an enemy which always makes me laugh.
Catfingers is alright. It's not great, not bad. There are better episodes to recommend.

I think it's hard to point to just one or two episodes to get someone into it. Part of what makes the show good is the slow build. I don't think I'd enjoy the show anywhere nearly as much if I didn't just start from the beginning and work through it, even though it didn't grab me for a few episodes.
I really love seeing Peridot learn how to interact and be 'normal' like this. Character development, yes.
It is amusing that Peridot is so smart, but didn't just go untie/unhook the leash.
Well yeah, she's a kindergarten technician, not an unruliness tether specialist!
This was a good episode, and not just on account of being super-gay (though that certainly adds bonus points). I'm always impressed with how they manage to squeeze so much into just ten minutes.
If we're recommending good starter episodes I think Laser Light Cannon has to be on there, it's basically a theme synopsis coupled with some great animation and character beats.
I would say Tiger Millionaire but I tried that on my wrestling-fan friends and they couldn't get into it, my friends suck.
I'm not a wrestling fan (I think its very silly) but I have to say i found tiger millionaire adorable. it was like a parody of wrestling i felt pretty much nailed the sport.

Cat Fingers was great.
Cat Fingers was a big deal at the time, because it was the first episode to really challenge your preconceived notions of what the show was going to be like. But if I was trying to hook a new person on the show now, Steven and the Stevens accomplishes a similar thing while having broader general appeal.
Also, I think Too Many Birthdays is a solid contender for early, low-spoiler episodes to show someone. It does a good job showcasing the personalities of all the gems. Clown-Pearl and "I thought violence would be the answer" are especially great.
If I had to sell someone on the show with a small number of episodes but didn't want to go full-on spoilertown with it, I'd be sorely tempted to go Cheesebuger Backpack > An Indirect Kiss > The Test, plus one or two fun ones to fill it out. A lot of skeptical viewers find Steven annoying in the early episodes, and The Test is a good way to show where his character arc is going without giving away any of the major stuff. It's especially handy if they already saw Cheeseburger Backpack and didn't like it much.

Had I been shown Keeping it Together before seeing the rest of the show, that may well have chased me off the series.
