The reason I am grabbing Experimental Interface is so that I will be able to use my action to focus, tl, barrel roll, or evade, then give someone the ability to take their own action via Squad Leader.
In general, my plan is to hang back and try to stay out of arcs while taking potshots with the mangler. Stress shouldn't be too bad to clear with the 1 banks, 2 straight and banks, and 3 straight being green.
Further advancement in the Scyk could have me upgrade to a Heavy Laser cannon for more sniping, or an engine upgrade and evasive maneuvers to become more of an arc-dodger.

No, not usually.
In this, any card that says it is discarded when used is then available for you in the next mission. If it doesn't tell you to discard, you keep it for the duration of the mission!

Personally, I would suggest jumping in a Y-wing, kitting it out with a turret and an astromech, and going to town.
It's got 5 hull points and 3 shields, so it takes a beating, and it isn't too hard to fly.
You can skip the BTL-A4 title, if you want, since it's a bit tighter on the targeting requirements. R4 Agromechs are great for Scum Y-wings: BTL-A4+Ion Cannon turret+R4 Agromech (7XP) or non-BTL-A4+Blaster Turret+R4 Agromech (6XP), but less good with a Twin Laser Turret (TLT is good in its own right; choose a different astromech if you like the look of TLT).

I just like the idea of having a quicker ship.

It's actually better because it has an extra evade dice. Though considering Stealth device puts you up to a whole 4 dice till you get hit (and honestly, you're perfectly capable of being two shot) it and a mangler cannon are probably the way to go with over shield upgrades, which costs an extra point regardless.
Part of the fun of this though is you get more modifications and EPT's for your ship as you play (which you don't in standard X-wing). So you can totally eventually get a super ship with all the stuff on it.
EDIT: That's a point actually, @DaMoonRulz you might wanna consider swapping one of the modifications unlocks for a second/first illicit upgrade seeing as it's Scum.

One quick suggestion: CTRL-M puts a colored dot on ships/dials in Vassal X-wing. You can cycle through various colors.
Might help people track the action to have each player distinguished by color.
