Man, I can honestly see Woolie ending up in something more legit like Giantbomb or something. He's really doubling down on production and seems to aspire to something more then riding the youtube wave.

Awe, SBF is no less legit just because it lacks the scope.
I mean I stopped watching subscribing to Giant Bomb because like 70-80% of the folks there just aren't for me. (And some of my favorite folks left.)
Plus the GB guys display a level of cynicism and reservedness that, while for the most part works for them as professionals (with off-brand humor), would not gel at all with any of the SBF.
The SBF are, for lack of a better word, fanboys. They get excited at even the dumbest stuff, they hoot and cheer and yeahyeahyeahyeah.
For a future example of the differences between the two, compare the inevitable LP of Persona 5 both groups will be doing.

Yep, sure can't think of anyone at Giant Bomb who gets unreasonably excited about dumb shit or acts in any way fanboyish.

It's a more selective case with them, and rarely at the hype levels of SBF.
None of the guys would fit well at Giant Bomb based on their SBFP personas, though I imagine each of them would change the way they behave in a heartbeat if they had the opportunity
I would even go so far as to wager that their demeanor when doing SBFP stuff is pretty different from their demeanor in their private lives or when with, say, other family, or friends from different circles, or when they were at other jobs.

Does Giant Bomb do anything SBFP doesn't already do? They don't seem to produce a lot of written content or long-form work outside of LP's, and streams. I guess the audience is bigger, but there's also a lot less control over what they'd do and say.

I mean, I don't know that there's really a point to compare the two given that they're two completely different business models. The SBF are continually seeking out experiences they will like. They're entertainers first and kind of last, their only goal is to provide entertainment for the viewing audience, and that often comes with demonstrating the extremes of the emotions they're feeling. Giant Bomb and other review outlets are reviewers first. They're not selecting games that they'll be excited to play. They're selecting games that have come out. Their goal isn't to entertain and excite the audience, their goal is to genuinely state how they personally are feeling about the game. While Woolie gets to explore Dark Souls for the first time, Jeff is over there suffering through Tom Clancy's Cocaine Adventure.
People who are interested in that review culture will follow Giant Bomb, people who are interested in excitement and entertainment will follow SBF, and people who enjoy both will follow both.
He's also, I believe, the only Skeleton you find in all of Dark Souls who hasn't gone hollow. He's just BONES for God's sake! That's some insane willpower. Erryday I'm smithin' fool.

Also Steak isn't that worth it even though it's double the effect for only like, 150% of the cost.

He returns from his slumber looking taller and calling himself PAT.

I'm not sure which bit is my favorite.
"Not the head-bite!" is hilarious in that CDI-Zelda-esque "see? We know about things that are in the game!" sense. It's adorably misguided.
The amazing shrinking Dee Jay is also amazing. It's like the animators had a goal in mind for the scene without thinking about anything else.
But perhaps the best bit for sheer extended absurdity is the infinite spinning kick into the exploding barrels.
Wretch ahead
Pat's bad at puzzles.
I was so mad at the end of the blackjack episode.
