I'm gonna disagree with most of the people here and say that there is a segment of the game that was very clearly intended for you to already know what happened in Nier 1 and I spent basically all of it completely lost, which ultimately detracted from my experience with the game.

I still have this sitting here unplayed since launch.
Should I go beat Nier first? Are there any callbacks or story points that tie Automata to the first one?
Minor easter eggs, for the most part
You get some context for some stuff too, but you don't need it for the main thrust of the story to have its impact

There's fun cameos like the Dragoon Lance, and your already mentioned Accord reference.
There's also the Cult of the Watchers symbol popping up on Eve. Then in Patch C you have the Red Eye Disease, a curse from The Watchers that turns people berserk, everywhere which was originally supposed to only effect humans mutating into an android affecting disease. And the Terminal is clearly modeled after Manah and has the same goal of destroying humanity (or the remnants of) as the Watchers.
The machines have become a continuation of the Cult of the Watchers.
It's subtle stuff, but it shows the games are all connected and the real big bads are still out there.
I would say if you're playing Automata WITHOUT playing NieR first, DO NOT read a summary of NieR.
You can absolutely get 90% of everything out of Automata without NieR knowledge, and by reading things you'll rob yourself of some really cool moments if you do go back and play the first one.
I think seeing some things in Automata and being confused, or not knowing that it's a big deal, is just as fun in reverse.

I started route C, and the jump in enemy level was so massive that I couldn't play anymore
I'd have to grind levels and that sounds really tedious

I never played Nier, but I did watch the 2BFPlay LP of Nier and seeing them just... standing back there made me go "Wait, why are they here?"

Not a super essential callback (because really, every other android in that route has been trying to fight you, so you're almost expecting to Boss Fight them at that point), but a super cool one.

Project Gestalt has absolutely nothing to do with the Tower or the Machines
The things that tie the two are supplemental. Not entirely necessary to enjoy the core conceit of either of them, but are merely there to enhance the experience of either. There are neat things there and going back read up on the connections only made me love the product more.
