There are only like, 5 cards with extort on them and 3 of them aren't that good.
You really only need Blind Obedience. Crypt Ghast is nice if you're running heavy swamps, Pontiff of Blight is amusing as hell in my Alesha deck, and the rest is mostly limited chaff.

So Adapt is like Monstrous. Though knowing the Simic, there will be cards that pull counters off your creatures or move them around, so then you can Adapt again to generate more counters.
edit: in a world of Branchwalkers and Jadelight Rangers, Zegana being a 4 mana 4/4 cantrip with double upside is pretty respectable (especially since we'll be getting Breeding Pool). Turn 1 Llanowar, turn 2 Jadelight, turn 3 Zegana, draw a card, swing with 4/3 trampler? I'd experiment with that.

Also I won the night if not in record, in spirit: I put together a durdle deck that used Buried Alive to bin a bunch of Myr Servitors, get them all back, then used Phyrexian Tower/Altar + Songs of the Damned to hard-cast muthafuckin Emrakul.
And if that didn't work I got a bunch of mileage out of Mikaeus and some evoke cards holy SHIT is that interaction busted. Evoke Shriekmaw, kill your guy, sacrifice it, undying triggers, kill your OTHER guy and I got a 4/3 fear for two mana.

Simic is everything good about Magic: drawing cards, big splashy (and literally flashy) bodies, and V A L U E, all while losing!

Cons: I only opened two mythics (Leovold, Vengevine), and my foil rares were all around $10. Not an awful box but nowhere near some boxes I've seen.
Pros: Cavern of Souls was my box topper.

Both of those card's adapt costs seem too much to be worth it though.
Also weird that your big creatures could technically be screwed over by someone putting 1counter on them somehow.
Since Dominaria, I feel like the art direction/quality in general is swinging back around to being really good. The art on Torment is fantastic.
