Off-color is a term used to describe gemstones that are not of the "right" color. Non-yellow Topaz, non-blue sapphires*, colorless emeralds, ect all are natural colors of gemstones. Because they don't fit a particular social ideal of what the gemstone should look like, they're considered off-color and are worth less than the on-color variety.
It's worth noting that yellow, blue, brown and pink diamonds were once considered off-color, but marketing strategies have made them more attractive to buyers.
*red sapphires are Rubies.

Finally got to watching the finale - that really felt like a series finale, so I'm glad to hear that it's not. There's a lot left unsaid, and I agree that the last 5 minutes or so felt like a really fast wrap-up.
It was all pretty awesome, in a more literal sense than usual.
The PinkSteven reveal was pretty crazy. I'm still not sure how to interpret it. Clearly PinkSteven is Pink Diamond in a material sense, but she's 'gone' in the sense that she doesn't exists like the other gems post-reforming - PinkSteven is a new person. But then, he has memories from Pink Diamond, so that's... leftovers? Weird.
It also felt like they brought out ALL the fusions just 'cause. If this was Transformers or something I'd assume toy sales, but I don't know what the rationale was here... it just felt like a big fan service. Obsidian alone would have been enough!

the gem is like an iphone thst had all of rose's personal data, and she did a factory reset on it and gave it to steven, so now he has all the power of an iphone but with only his personal data and whatever residual data is stored in memory

I think it's been mentioned before, but Steg is a character in a gamergater's webcomic and he actually looks like that fusion and it freaks me out a little.

Doing a slow rewatch of the show here and there, just finished the episodes about
the human zoo and
somehow I totally missed before (or just forgot) that the station that houses the zoo also has every single other Rose Quartz bubbled. That answers the lingering question I had about how come we never saw (or even heard mention of) any other Roses when there are clearly multiples of all other gems except the Diamonds.
