I went from “ok, I should start Steven universe, people seem to love it” six days ago to all caught up and declaring Pearl the best character in western culture.
I'm kinda not. Seems like an out of nowhere change for a character whose secret weapon is "if every porkchop were perfect, we wouldn't have hotdogs."
I guess it is meant to communicate that Steven is way different now and we didn't even notice, putting the audience in the place of the Gems.
As a cow I'm biased but I think it fits with his character (Steven's radically compassionate attitude towards all living things) and also fits in with the season's overall theme that people change and aren't static

I love the new intro but find it a little tiny bit weird that they sing the title of the show ("Steven Universe Future"). In the original they just sing about the Crystal Gems, the team, not Steven Universe, the show!
Very special episode is one of those episodes where something clicks in your brain and suddenly you realize “oh the creator watched Invader Zim as a kid”.
Oh for some reason I thought the last few weren't scheduled until May.
They could be, but episodes 11 through 16 are all in March, according to wikipedia. For this stuff it's usually accurate. But then again, Cartoon Network scheduling might as well be as clear as mud.

To speculate on my own question: There are six (technically seven) "enemies" shown in the opening. Four of them have had episodes so far.

I think it was @Incenjucar who was saying that Steven hasn't had any real character development on the show. SUF is almost 100% that.
