I find it refreshing for now, but I don't think I'd stay interested if that's what the series was for the next couple of years. Even with the template, you can tell more interesting stories. If, in the second or third season, we still get simplistic Star Wars knock-offs of Seven Samurai (it's the simplistic part that bothers me, not the knock-off part), I'm going to start looking for something else. For now, I'm okay with it, though.

Blah. I believe that you can tell better stories in light one-off episodes than The Mandalorian has done. It's a fun show, but its strengths lie elsewhere than in its stories, much of the time. Doesn't mean that the stories and writing couldn't be improved, because I definitely think they're more Saturday morning cartoon than they need to be.

As expected, the final season of Clone Wars seems to be focused heavily on the Siege of Mandalore (Republic+Mandalorians against Maul+Mandalorians at the end of the Clone Wars, as in 'Order 66 happens in the middle of things' end). Probably worth catching even if you haven't seen the rest, since there's very little chance they don't take the opportunity to slip in something that is/will be relevant to The Mandalorian.
To elaborate more on what I said, even though they're using old scripts more or less, Filoni confirmed that they've been tweaked for newer canon stuff.
For example, you can see Caleb Dume (Kanan Jarrus) and his master in the group holotable scene in that trailer.
What is the deal with Mando’s right leg plate? In the show I thought it was just that he didn’t quite have enough Beskar for a full set, so it’s from his old armor (like with his hand plates on the gauntlets)
But everyone seems to agree that it’s a new one made of Beskar but it has a weird symbol(?) or something on it. I doubt the blacksmith just screwed up and left it
I know this symbol was on Boba Fett's armor so it pops up other places

Whether or not Boba Fett is a Mandalorian depends on how much you think Jango Fett is a Mandalorian. If Jango was a Mandalorian then he could have raised Boba as one ("a clan of two"). Otherwise, he's just another pretender wearing armor he didn't earn.
IIRC at one point Filoni confirmed that the Fetts were not Mandalorians, either, based on his discussions with George Lucas. But nothing is "in-canon" until it's shown on screen, regardless of who said what.
So right now I think it's ambiguous but probable that the Fetts are not Mandalorians. But it's 100% true that 10,000 Super Death Star Destroyers were raised from the ashes of Exogol.
