I dont really want to get into this argument too deep: But it's not age as a factor i'm thinking of.
It's accessibility, esp with regards to disability or similar. Way more could be done in this area, but stuff like winged yoshi mode, with zero penalties for activating it, is a good fucking step.

Modern Starfox game: planets with cities and areas that act as "all flight mode" battle arenas. Flying from one area to another is done by means of on-rails segments, space combat is done when flying from planet to planet.
Edit: basically just do Starfox 2 but modern. That game was way ahead of it's time.

If by jump scares you mean needing to jump off ledges with those god awful controls, then I agree.

But there's a LOT of stuff that is challenging the first timearound because you have little to no way to know it's coming, and drops in diffuclty once you're armed with foreknowledge. It's a very distinctive thing of the dark souls series, and one of my greatest complaints with it. (Compare and contrast other games near that space where foreknowledge of movests helps, but dosent negate the challange). "Gotcha gameplay" might be the terminology i want.
The skeleton boulder in the catacombs would be a classic example, or any of the "Enemy hidden in away you cant see them coming till they jump out and shove you off a ledge". That sort of old-school Tomb of annihilation feel to things.

New Pokemon Snap! What a terrible name! But i am so excited. I have been jonesing for a pokemon snap sequel for ages, and i was so annoyed they never did it on the Wii U, which woulda been such a good platform for it can you even imagine that. But now? Yesssss. I am so excited. Give me a peaceful rail shooter that's about all the pretty pictures.
Dark Souls mostly just punishes incautiousness. If you're careful you can get through most of the game quite well. If you try to rush through places you will get your shit stomped. I've seen people who weren't any kind of great gamer (including one streamer who had trouble fighting keese in legend of zelda) beat the first Dark Souls by just being careful and paying attention.
Now, Dark Souls 3, that was when From started to drink the whole "Dark Souls games are hard!" koolaid.
The peak of "jumpscare difficulty" would be the Capra Demon boss fight in DS1.
"So you enter the boss door anD THE BOSS IS ALREADY ATTACKING, THE ARENA IS THE SIZE OF A CLOSET AND THERE ARE TWO DOGS ALREADY LEAPING AT YOUR THROAT oh you died? How unexpected."
Pokémon Snap feels like a glimpse into what Pokémon could (or perhaps should) be. All those Pokémon just going about their actual business instead of showing up like random encounter or just wandering aimlessly. It's just neat.

Yeah Activision and EA not only have astronomical sale across multiple platforms, they are also raking in tons of MTX, something Nintendo does only lightly with their console games. They have the best IPs of a console maker by far, but that's as far as it goes.
Also said IPs weren't enough to save the Wii U. You need actual compelling features to sell an underpowered system this well.
