Have Hololive and Ninjisanji crossed over recently? Selen/Ollie was postponed last December but it's been half a year and I'm wondering if that sort of thing is still possible or if one of the companies decided it's no longer in their best interests.

I'm not super up on the JP side, but Mika from Niji and Risu from HoloID collabs recently. The respective EN branches have only interacted on Twitter.
NijiEN has not collabed with Hololive in any official way as of right now. The cancellation of the Ollie/Selen stream launched a bunch of theories as to which company is to blame but we don't have any concrete info one way or another.

Famously, before guru's debut and coco's retirement, the biggest vtuber stream ever was a big cross company pawapuro collab where subaru got so in to it that she dropped the gimmick voice
Recently and outside of Apex, I think it's possible that Project V and TV Asahi have had recent things going on, but I haven't payed much attention to them since January. That was when Okayu got closer to Rena and Claire, and Subaru got physically closer to Suou Patra to trip her feet and do a takedown. Next month is V-carnival, but only if you are north american, south american, oceanian, or asian. They had to negotiate up to that from only Japan. Even though the 2021 event was global. All of NASS were placed on the same day of the event, so I wonder if they'll do anything. I'll only ever see screenshots if they do.
If you like watching Miko recreating people in WWE2K22, Kanata occasionally does that in Miitopia, and Koyori recently started doing it in Power Pro. I'm not sure how many clips you'll see of the latter, because Konami are sometimes cranky.
