    there seems to be a fundamental misunderstanding about how we use cheese

    just because something is 80% cheese by volume doesn't mean we consider it the main ingredient

    The ricotta layer is mixed with eggs and mozzarella. It makes a light cheesy layer to contrast the heavy noodle and meat layers.

    Its cheap and easy.
