Most people are uneasy with the concept of eating pig parts that aren't strictly muscle; I grew up in South Texas, so the concept isn't completely alien to me. Just an observation. Also, Serenity Rose is from Texas and not many non-Cajuns get exposed to boudin in a favorable fashion.

Traditionally, boudin is made like hagus: every part of the animal but the hooves.
no....No....NO!!!! Don't say things like that. The boudin I eat is pork sausage, rice and spicy seasoning. If it does somehow contain lips and assholes, I do not want to know about it!!
