Guys, lets make a recommendation list for the OP. I was thinking each poster could pick a few of their favorites from several genres, for some variety. I'll start.

Giant Robots: Gunbuster. One of the few shows around that tries to incorporate relativistic effects of near-light speed travel, but even if you don't care about such nonsense, it's still a great action show with one of the best endings in anime.

Romantic comedy: Nodame Cantabile. Pretty much just a show about music school students.

Slice of life/school life: Sketchbook Full Colors. Just a bunch of high school art club members doing stuff.

Martial arts: Hajime no Ippo. A chance encounter leads a young man to take up boxing, in which he is preternaturally gifted. Hey, boxing is a martial art. If only eastern martial arts do it for you, Bamboo Blade is a fun show about a high school kendo club.

Romance drama: ef - a tale of memories. Several interwoven stories of romantic relationships. As the title suggests, memory plays a key role in the series.

"Hard" sci-fi: Planetes. The story of "space trashmen" who clear debris out of Earth orbit. If orbital mechanics is your thing, this is the series for you. Or, if you just want a great story that starts out kinda funny and gradually builds into a suspenseful thriller, it still might be for you.

Fantasy/Sword & Sorcery: There are several classics, but just to be different I'll pick Tower of Druaga. I just really liked the depiction of magic in this series. It was more varied than the usual "FIREBALL" "BOOM". Also, it is based on an old video game and has some fun fourth-wall-breaking references to that fact.

I tried to pick a mix of old and newer shows. If more people post recs I'll add them to the OP.

The surfing robots are important, but the interactions between two characters in particular (and their GFR) are critical to the show:

Action / Comedy: Great Teacher Onizuka. The title says it all.

Slice of life / Comedy: Azumanga Daioh. The daily life of a group of high school girls and a certain English teacher is sure to get you some laughs.

Romance: Honey & Clover. A melancholic and inspiring series where five art students are entangled in love triangles when a very talented young girl named Hagu enters their lives.

Slice of life / Supernatural: Natsume Yuujinchou. Natsume is gifted with the ability to see spirits. With the help of the cat spirit Nyanko he tries to befriend spirits while living a normal life.

Action / Supernatural: Moribito: Guardian of the Spirit. A female warrior named Balsa is entrusted with the life of a young prince whose father has given the order to assassinate him.

A recommendation list sounds like an excellent idea, considering how the topic pops up every now and then. Here's mine:

Slice of Life: Honey & Clover. It's a show about the lives of five students at an art college. It's charming and funny, even if some moments get a bit emo. Luckily, Morita's eccentric shenanigans make up for the emo moments.

Comedy: Detroit Metal City. Guy who wants to start a career as a pop singer somehow becomes the lead singer in a popular death metal band. Although he's a nice guy, he has a violent, foul-mouthed stage persona and he sometimes inadvertently switches to his stage persona in his normal life. As you might guess, hilarity ensues.

Comedy/Parody/Crazy Alternative History: Gintama. Taking place in the Edo-period, this setting involves an alternate history in which aliens have conquered Japan. Gintoki is a samurai who fought in the war against the aliens, and now works as a free-lancer, doing anything for money. Its focus is on comedy, though there are episodes that are serious. But those episodes are rather rare. For the most part, it consists of episodic misadventures with a nice variation on the type of comedy used. The Shinsengumi also make an appearance, but they're quite different from how they've been portrayed in other anime to say the least.

Long-running shounen fighting: Yu Yu Hakusho. Animation is good for the time considering how long it is, the characters are good and the battles are fun to watch. Definitely one of the better shows in the genre.

Sports: Hajime no Ippo/Fighting Spirit. Seconding this recommendation as it's a fun watch. The pacing is better than most shows based on an incredibly long manga, and the fights are fierce. The best thing I can say about this is that I enjoy it even though I have little interest in boxing.

Mecha: 08th MS Team. This is my favorite Gundam series. Granted, I haven't watched too many, but this show is a bit more realistic; it does a good job at showing war through a normal soldier's eyes instead of some jerk-ass kid piloting some super robot that normal enemy robots can't even scratch. It's also shorter than most Gundam series (only 12 episodes total) and it does a good job at being standalone.

How about listing a bunch of good manga too? It's slightly off topic, but for folks that post in the thread a lot it might be more useful. Like, personally, I'm pretty much not going to see anything new in a list of great anime.

    Mystery/Action/Comedy: Baccano!
    mystery/science fiction :Denno Coil
    Real Robot: Nadesco
    Magic Girl: Nanoha A's
    Drama/Mystery/Psycological: Monster
    Slice of Life: Ichigo Mashimaro

And in a related note, the Live Action series of that is also... surprisingly good. Excepting one of the movies. I think there are two. I do not remember. If there are two, the first is ok. The second one is made of terrible and camp. If there were only one, then the only one is terrible and camp.

Giant robots: Gundam 08th MS Team: Probably the real-est real robot series ever, and one of the best because of it. No teenagers with psychic powers or ridiculous super-weapons* here, just giant robots fighting each other in the jungles of notVietnam.

Comedy: Sayonara Zetsubou Sensei: A suicidally depressed and a class of walking stereotypes. Very surreal, best if you know a lot about anime before you watch it.

Historical fiction/action: Bakumatsu Kikansetsu Irohanihoheto: A bizarre retelling of the fall of the Japanese shogunate, involving the evil head of an ancient Chinese emperor and magical swords. It kind of falls apart in the second half, but still well worth a watch.

Comedy/sci-fi/historical fiction?: Oh! Edo Rocket: From the director of Gurren Lagann, this is a hilarious show about an alien from the moon who lands in Japan and convinces a fireworks maker to build her a ride home. Has excellent music.

Horror/mystery: Mononoke: A medicine seller goes around killing things far worse that malicious spirits. Kind of a cross between a psychological thriller and a murder mystery, with a very interesting art style.

*may contain one (1) ridiculous super-weapon.

Digimon is another extreme example, despite being MOTW and episodic, it had some REALLY stand out moments, like this,

That's not character development. That's a walking, or I guess flying, cliche.

The best example I can think of right now is actually Saul Tigh. On a similar note, Babylon 5 had Londo Mollari.

As for some good anime examples, FLCL and Haruhi obviously come to mind. Code Geass maybe, although I'm not sure about that. Eureka 7. Host Club. Gundam 0080.
    What,
Wizarmon's death, and Hikari and Tailmon's Character Dev.

was where Adventure really came into it's own and established Digimon as a really great series.

    a) I don't think even PikaPuff will care if we spoil fucking Digimon.

    b) Character A dies which causes Character B to become stronger and/or Badguy C to switch sides is like the Middle School Algebra of storyline. It could have been written by a two year old.

That was kinda late into Vamdemon arc, though.

What about the awesome first instance of Adventure's beard growing? Taichi's character developement at the start of the Vamdemon arc? where they bumped up the animation to make it more dramatic.

That is also not character development. That's how Taichi has always been.

I'm talking about the stuff towards the end, duder.
the conflict between going back to the Digital World to help the others or staying with his sister.

And I'm saying that's not character development. You already know what he's going to decide, and more importantly a single instances of internal conflict does not magically result in character development.

Character development requires that a character change over time, amongst other things.

Has there ever been a game->anime adaptation that was actually any good? I'm blanking right now

    Onwards to the recommendations!

Fantasy: Twelve Kingdoms/Juuni Kokki: Based on a series of books. Girl gets sent to alternate ancient Chinese fantasy world.
    Supernatural: Mushishi: Beautiful and poignant.
Fighting: Airmaster: Former gymnast turns street fighter. Hilarious and mercifully short at 27 eps.
Sports: KaleidoStar: Animated Cirque du Soleil. Strangely compelling.
Slice-of-life: Honey & Clover: College life in an art school. Heartbreak and angst hit a little close to home sometimes.
Magical Girl: Shoujo Kakumei Utena (Revolutionary Girl Utena): Surreal fairy-tale-inspired dueling anime by the director of Sailor Moon. Yuri, yaoi, incest, statutory rape. People turn into cars in the movie.
Epic Space Opera: Legend of the Galactic Heroes: Benevolent tyrant vs corrupt democracy. Space Germans try to take over the galaxy.
Romance (manga): Mars: Rebel guy + shy girl. The best example of this traditional pairing. Adorable.
Post-apocalyptic slice-of-life (manga): Yokohama Kaidashi Kikou (Cafe Alpha): Android runs a coffee shop. Time goes on.
