infinite detection basically kicks in if you start repeating combo strings, so you have to begin your combos with different moves each time to prevent it from happening.
Once it has happened the opponent can burst out of your combo that is going on.

So instead of finding infinites after the fact and gimping characters/the engine to fix them you build in a way out.
Step 1) Pick Parasol assist
Step 1a) If playing Peacock or opponent picked Parasol assist pick Double assist instead
Step 2) Turn on turbo for the assist button and tape it down.
