What troubles are you running into specifically? I remember the installer being fairly straight forward and not needing all that much input. Which version are you using and what features/programs do you want out of the suite?
To set the defaults for saving, open any of the apps, then goto:
Tools > Options > Load/Save > General.
Under "Default File Format and ODF Settings" section, there are two drop downs. The first dropdown selects the application type (Text document, spreadsheet, presentation etc), then change the second dropdown to the file format you want to use.
eg:
Text Document = Microsoft Word 97/2000/XP
Spreadsheet = Microsoft Excel 97/2000/XP
Presentation = Microsoft PowerPoint 97/2000/XP

Careful with formatting though, sometimes going from an Open Office .doc into a MS word program can cause some odd formatting.
