A quick googling reveals a couple of how-tos that both date from iTunes7 but I suspect the procedure to be roughly the same.

yeah, if you let iTunes organise your folders, its pretty easy to copy them across and import.

Use new iTunes and use home sharing... just turn on sharing on the old one and hit import on the new one.
