Things to do in Orlando that don't involve theme parks

My brother and I were here for the shuttle launch. Now that it's in space we're looking for things to do.
We've already spent a lot of money on this trip, so neither one of us particular enthused about dropping another $100 each to go to Universal or anything like that.
Also, it'd be nice to find somewhere to eat other than TGI Fridays. My usual avenues for this don't seem to work very well here.
Any tips would be appreciated!
Edit, more info: We're going back to Kennedy today but we don't think that'll take all day. So we can do some more stuff in the Space Coast area or also around town. We leave early Sunday evening.

edit: Universal is so much fucking fun. Employees sell tickets on craigslist all the time, so if you can swing $40 each to get in, you might want to heavily consider it. Regarding food, Orlando is the chain capitol of the world.

We're staying near the airport. We ended up spending all day at KSC so we're not as desperate as previously indicated. However, thanks for replying!

Try looking though this list. Corkscrew Park is amazing. My family walks it every time we're is the state.
