So I bought an HDMI to DVI cable so I could plug my Xbox into my monitor, and it works great, but there's a problem - the default Xbox AV cable is so big that I can't plug it in at the same time, which means I can't use RCA sound connections. How the fuck are you supposed to plug them both in at the same time? Why does the Xbox AV cable have such a huge piece of plastic around the connector?

I guess this is what I get for trying to be a savvy consumer. I figured the official 1st party cable was heavily marked-up in terms of price, so I bought a relatively inexpensive HDMI-DVI cable and RCA-3.5mm adapter. Should have just spent the $40, because now it looks like $40+the value of the stuff I bought and can't really use.
It looks a little ghetto, but it's out of sight and works great. I'm currently using it to run HDMI to my monitor and RCA to my speakers.
I went the richman's route, buying the Hige Definition Kit Thing (tm), which is essentially $40 for an hdmi cable and a version of that connector that is smaller and doesn't block the optical port. Optical to home theater, hdmi to TV, party all the time.

This was my first thought, glad to see someone else did it first (to make sure it works). Let's see if I can do it without putting the screwdriver through my hand.

No. It's a whole different cable. It's the best way to hook a 360 to a monitor.
(As it has audio connectors as well as the VGA)
EDIT: Here's the official one. There are 3rd party ones for cheaper as well. I have no idea what the comparison is though.

Edit: Yes! It worked!
