Monster Hunter is a series about hunting little things, making weapons and armour from the bits of the little things then eventually using those weapons and armour to hunt bigger things. Repeat until the next game in the series comes out.
Monster Hunter 3 Ultimate is an updated and uprezzed version of Monster Hunter Tri that was originally released for the Wii. It's due for release on the 22nd March 2013 for both the Wii U and 3DS. Online play is available on the Wii U and to a limited extent on the 3DS, as long as you play through a lan adapted Wii U. (protip: buy a Wii U and play with PA dudes). Data transfer between the Wii U and 3DS is included, so you can do some hunting on your lunch break and come back home to show your buddies your new sword.
Capcom are pretty cool dudes so are patching a bunch of features into the game after release. These are cross region play, Wii U gamepad voice chat, USB keyboard support and off screen play.

Charm Tables
For some reason when you begin a character in 3U you are locked into a specific charm table that the game pulls the charms you can get from. You've no real choice in what you get unless you use the following method. To have a look at all the charm tables go here, but basically you don't want 11, 12, 15, 16 or 17.
To aim for a specific table make sure your Wii U/3DS is not connected to the internet so it doesn't automatically update. Once you're ready to start a new set your system clock to a few minutes before one of the following times based on which table you want, then set a stopwatch going. Boot up the game and once the stopwatch has counted the remaining time of the table you are looking for press New Game. For instance if you wanted table 1, set your system clock to 00:12:11 and as you press OK start a stopwatch. Boot up the game and once the stopwatch has reached 2m press New Game. You have about a 3 second window for each table so make sure to be precise. Here is a list of the tables and timings with a brief description for each table:
Normal Tables
T1 00:14:11~13 - Contains a nice balance of Blademaster and Gunner charms with high stats/many slots, but lacks good Awakening charms and doesn't excel at any one thing
T2 02:14:39~42 - Feels like an inferior version of T1. Lacks any amazing charms unique to this table, not much to talk about
T3 00:11:28~30 - All-purpose table. Especially rich in good evasion charms, but has the possibility for many skill setups with a Handicraft +4 OOO charm (with Sharpener -3).
T4 00:05:47~49 - Good for Blademasters. Has the most charms suited for Lancers, but also contains a Handicraft +4 OOO charm and is good for other Blademasters as well
T5 00:56:43~45 - Good Evasion Distance and Earplug charms, great for Switch Axe and Heavy Bowgun users. Most of the good charms are Dragon Talismans though, so grinding for them may be a chore
T6 00:42:17~20 - Leaning towards Blademasters. Has both Handicraft +5 OO and Handicraft +4 OOO. Contains great charms for Evasion and Awakening with other useful skills
T7 01:43:58~01 - Most plentiful in Evasion charms. If you want Evasion +2 regardless of your weapon, this table has good unique charms
T8 09:25:48~51 - Above average Evasion and Guard type charms, but slightly lacking in other areas. Its Dragon Talismans tend to be good
T9 07:09:58~01 - Somewhat geared towards Gunners. Has plenty of charms with a gunner skill combined with Attack +10 or Expert +10. Does have excellent charms for Blademasters but its Handicraft charms are the worst of all tables
T10 00:14:43~45 - Extremely good charms that combine Handicraft with another skill, such as Handicraft +5 Free Element +7. Is also plentiful in Edgemaster charms and probably gives the highest possible power with pretty much any Blademaster weapon. It does seem to be somewhat lacking in Good Evasion distance charms
T13 00:07:46~48 - No unique godly charm, but does have a wide variety of good charms in most areas
T14 00:17:02~05 - Slightly geared towards Blademasters. Many great charms such as Sharpness +4 Free Element +7 and Handicraft +4 Expert +10. Rapid Fire +5 Expert +10 is great for Light Gunners as well

This has been proven to work but to confirm which table you are on you need to unlock the fishing boats by completing the quest to collect 3x Monster Guts. Send out your boats and once they return go here and enter into the table the exact item and amounts your boats came back with in the order that you see them. You'll get a result that shows which tables have been ruled out and which you may be on. You'll have to do this several times to fully confirm your charm table.
If anyone has any updated guides or useful stuff I'll definitely stick em in there.

The official word is launch window with the hope of launch day.
I did just see a post in the Capcom forums that someone saw an eShop banner in the WiiU store that said it would be available at midnight launch day.....I can't check my WiiU right now to confirm though, nor if it applies to the 3DS version as well. If its true though, I am one happy hunter.
I started out with Sword and Shield and started hunting my first bigger monsters. Then I realized I need to pick a weapon because I'm not going to bother with getting the materials twice.
The Internet said I should get a lance, so I got a lance... But now the game plays even more like shit! This is almost unbearable, it's impossible to dodge anything at all, for that you have to put away the weapon, to put away you have to wait 2 seconds, it's just infuriating. 10 hours in I think I've had enough, how you people put 100s of hours into this is beyond me.

I don't know who The Internet is, but he sounds like a jerk.
First off lance in MH3 is the aggressive tank weapon but it's best for large monsters, and by that I don't mean Great Jaggi, I mean something Barroth-sized and larger. It has great blocking and evasion abilities but the evasion stuff definitely takes practice. As a new lance user, get familiar with blocking, and use a more agile weapon on lower-tier enemies who tend to be extremely mobile.
If someone recommended you lance without going into more detail than "get a lance", then they've done you a disservice. Honestly, Sword and Shield and Hammer are the most mobile and intuitive weapon types.
I don't know if "dodge" is the right mindset to have about evading attacks in MH. You certainly can make sure that you aren't where an monster's attack is, but all the evasion moves have a brief moment of invincibility and much of the time you'll want to take that brief invincibility into account -- not only do you want to use the locomotion that the dodge provides, you want to use your split second of invincibility to cause the monster's attack to pass right through you.

As for how to put all that to work, first thing you need to know is that after any quantity of lance thrusts, you can either backhop or side-step to cancel the recovery animation. The second thing you need to know is that instead of evading, you can actually chain the mid or high thrust into the counter-attack, which GUARDS against monster attacks and stabs if an attack is deflected by your guard.
So instead of having to stop attacking, you can actually cancel the recovery animation with the counterattack move instead (they nerfed this in 3U you can no longer chain counters as a 4th attack, so do it as the 3rd attack instead).
Another handy thing to know is the Guard Advance. This lets you dash forward a few steps while blocking against attacks. The neat thing is that you can chain a shield bash move onto the end. The shield bash move does impact damage, which contributes toward tiring the monster (and can KO it if you hit the head). So if you Guard Advance into a monster's attack and it deflects, you can tap again to bash them for damage and to help sap their stamina away.
Lastly, while you cannot chain together multiple shield bashes (or the wide-sweeping lance swat attack), you CAN actually chain those into regular thrusts. This is one of the secrets of very aggressive lancing. Guard advance into an enemy's attack -- blocking it --add the bash, then stab them once or twice more, and then either evade or counter so you're not locked in the wind-down animation after 3 lance attacks.

Then you find armor skills to accentuate how you play or for specific challenges, and you can be good to go.
(Lance was [my favorite] in Tri, but I used lots of weapons.)
And if you're fighting something that mobile, it seems like you're rather early in the game. You're still learning how to play. Stick with SnS for now. It's mobile, it can cut and bash, you can dodge and block, and you can use items without sheathing. It's a pretty freaking awesome weapon.
Well I figured it works something like, you can pick up ONE "rare orb" every 3 million hours, so you can only upgrade ONE weapon properly, but if I get enough stuff for more then one I'll stop worrying for now and stick to Sword and Shield.

Picked up Freedom Unite and I've been using Greatsword in that so far. I really like the look of Hunting Horn in 3U so I'll pick that up and I want to learn a ranged weapon and the bow looks like the most fun for me. So with those four weapons I should never have any materials ever as I try to build a collection and hate myself.

And bowguns are split into light and heavy now, no mix and match of parts.
Monsters you hunt on quests not only get you carves, but there's cash a reward, plus an end-of-quest rewards screen that gives you up to 6 rows of additional items: Up to 4 from the mission itself, while the last 2 rows hold the items from breaking the various visibly-woundable body parts, and the extra loot from a capture.

Also, here's something I've been wondering about for a very long time...
What setup, disregarding food effects, would give you the most beneficial spoils from a quest? For a while I was rolling a low rank mixed set with Capture Expert, that supposedly gave me some extra rewards for capturing monsters. Now, I think that was only one extra reward slot though, so level with me here - wouldn't it be better just to go for the kill and get three carves, instead of the one extra reward? The only exception would be on Capture-specific quests, but if you want to legit farm monster parts, wouldn't the kill quests give you more materials and thus be just better?

Like, for example, the Volcano in Tri had the Powderstone quest. You get good money from it, and you can still find all of the stuff you might want from the area anyway, so for a long time I used to sign up for that quest when what I actually wanted to do was to farm Rustshards. Now, it was a bit of a hassle to actually finish, but since the Subquest was to deliver just one stone, and you could finish via Subquest, it wasn't too bad.

I think it's situational. Luck +15 would certainly yield more rewards, but if you're gunning for a particular monster part, you'd be better off with capture or even a carving set. If a tail carve has the highest percentage for getting a ruby or something, I'd take a second chance to carve over more rewards.
Defenses are lacklustre and you don't get any combat skills as I recall, but if you're confident in hunting then it's no big deal.
But generally I find it faster just to run through the quest a few times than worry about maximising spoils. I play the game to hunt things anyway, so having to hunt extra things to get what I need is rarely a burden...
I've realized that weapons aren't as much of a problem as is armor! The options are staggering! How do I decide which armor to craft? It seems like a dead end would be much more annoying with armor!
