Go with the "open up a .dat file in notepad, copypaste that into a word document, send that to the teacher, and then when he asks what's wrong with it, say it must of got corrupted in the emailing process"

Yup. I mean you can still try and bullshit a prof into offering you an extension but shit like that doesn't work. At least I have never had a prof that is strict with his deadlines that would put up with shit like that.
here's what I'm thinking now, and I've done this before:
just be completely straightforward. Tell him I'm not finished, and simply ask for a day's extension.
I once used the phrase "I would need an extension in order for my paper to represent my best work" or something like that. It worked but that guy was pretty cool and rather young. A grad student running a 1st-year english class in fact.
