Yeah, as of yet I don't have a Series X or PS5, and was sort of pushed into getting a 4K TV a few months back when my 1080p TV's panel died. But on the whole I agree, and had been in a similar boat with older consoles - a One X and PS4 Pro with a 1080p TV, and both on a 720p TV before that!
Depending on the game I'd rather have options - NFS: Hot Pursuit Remastered, for example, offers 30fps @ 4K or 60fps @ 1080p on my One X, and in a game like that the framerate boost is more than worth the resolution tradeoff. In a slower-paced game? Sure, maybe I'd take resolution over framerate. But it's appreciated when I have the choice. (Which, as I discovered with those consoles on the older TVs, was remarkably rare - perhaps a consequence of their notorious CPU limitations.)
But also, I have a 120Hz display on PC, and can't really perceive the difference above a solid 60fps in games that can go higher. Great for people who can perceive it, but for me I'm happy to max out at 60fps with higher image quality than go to 120fps which the new consoles are clearly already making big compromises to do.

I'm not really disagreeing about 1080p support, but I would think there's a decent overlap between early adopters for TV tech and early adopters of gaming tech.

Good point. But it's going to get rarer, that much is obvious. And it doesn't change the fact whereas buying a new console is difficult, buying a new 1080p television, over a certain panel size point, is nearly impossible.

I'm going to guess the percentage of Xbox Series X owners who have 4K-capable televisions is a great deal higher than those who have televisions capable of 120hz at 1080p.
Since the percentage of televisions that can do 1080/120hz but not 4K is, effectively, zero, and even among monitors it's not very common.
I've been on 1080p on my monitor and I'll be honest, on some games I prefer without HDR. Destiny in particular has terrible HDR still. I'll take higher frames over resolution any day.

HDR implementation is a made of artistic choice and implementation, and thus, can be good or bad.
As oppose to higher resolution, which is by definition higher fidelity. A game can look bad, but it's not because of it's higher resolution, it's because the game itself has inherent limitations or because at lower resolution it's too blurry of a mess to make out anything anyway. Higher resolutions can impede a much older game for that reason, in which case they're not good, but it's not like higher framerates don't actively harm games if they break their internal logic timing or change their controls in a bad rather than good way.
On the topic of "higher resolution" versus "higher framerate", unless you're sitting far from your screen, or have a small screen, 2160p at 60 hz clobbers 1080p at "about 120 hz". But at lower framerates, it's a much harder question. Faster refresh rates translating to a higher framerate can be a big advantage in control response--though when you quadruple your framerate, you're literally going to see small details (and large ones) you don't see otherwise. It's circumstantial.

Hey, has anyone tried running that xbox cloud android service on their desktop?
I want to play Halo 5 on PC, but was curious on performance/input lag.
I've got good internet, 1.5gbps up/down and stadia worked well but before subscribing and getting the android emulator going was curious on real world feedback.
Before you go down the emulation hole, they're sending out emails inviting people to try running Game Pass streaming through a web browser and if you haven't gotten one yet you probably will soon. I got mine yesterday and tried it and it's very slick, you log into the website on chrome and it works just like the Android app from there.
