Name that orchestral song!
There's an old, I'm 90% sure American, orchestral song whose name escapes me now. It has a relatively fast tempo, switches between violins to full orchestra, and pops up in various frontier and western media usually during a long action scene or success. It's definitely shown up in commercials with an old cowboy recommending you buy salsa or low end widgets.

You might also be thinking of the song "Hoe-Down" from the ballet "Rodeo," which was made famous by being the music used for the "Beef. It's what's for dinner" ads.
