Okay so I'm trying to update my network card, but when I run the .exe, it just spits a ton of files onto my desktop.

Where should I put them/what am I doing wrong?

THE END.

What OS? If it's 2000/XP/Vista, open up the device manager (Start --> Run --> Devmgmt.msc). Expand out network adapters. Right click your card and choose update driver...
Point it to your expanded files (on your desktop) and pick the .inf file. Hopefully that will display a choice (or choices) of network adapters. Pick yours and install the drivers.

If it's not listed under network adapters (like it's not been set up at all yet), it'll probably be under unknown devices (yellow '?'), and may be listed as network adapter, or just unknown device. Right-click and update (like I explained above)

I don't believe it - I'm on my THIRD PS3, and my FIRST XBOX360. What the heck?

What do you mean it's not finding it? There's no .INF file on your desktop?
